Just keep in mind that the glaze will not be as thick and sticky as the pan fry method.
To make these boneless pork chops in an air fryer, follow these instructions:
- Coat the pork chops in a thin layer of oil before coating in the spice mix.
- Preheat the air fryer to 420ºF for five minutes.
- Add the pork chops and cook at 420ºF for 7 minutes. Flip the pork chops and cook for an additional 8 minutes.

Instructions
- Preheat the oven to 350ºF. In a small bowl, combine the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper.

How to Make Glazed Pork Chops – Step By Step Photos
In a small bowl stir together 1/4 cup brown sugar, 1/2 tsp cayenne pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, 1/2 tsp salt, and some freshly cracked pepper.
Rub the spice mix over both sides of four thick-cut boneless pork chops. The moisture from the meat will dissolve the sugar and help the spices adhere to the surface.
Heat 2 Tbsp olive oil in a skillet over medium heat until the oil is shimmering. Place the chops in the pan and cook on each side for about 5 minutes or until browned.
Depending on the thickness of the chops, you may need to transfer the skillet to the oven (only if using an oven-safe skillet) to finish cooking. These chops were about an inch thick and were cooked through once browned on both sides. If any thicker you may need to finish in a 350ºF oven for 5-10 minutes to make sure the internal temperature reaches 145ºF.

Is there some way these can be done completely in the oven? I’m wondering if a preheated cast iron pan would work. I have breathing issues which makes stove top frying/browning (and resulting smoke) a problem.
You can absolutely do this in the oven, though you should be very careful not to burn yourself, especially with heavy cast iron. When flipping the chops, take the whole pan out of the oven and close the door ASAP. Opening an oven door, even for a few seconds, can significantly decrease the temperature, by up to 50 degrees or more. XOXO

I made a couple tweeks but it came out DELICIOUS! I intended to grill the chops. I used the olive oil in the glaze to bind the ingredients into a paste. Just thought it might work better on the grill that way as I seared the chops before applying. Otherwise followed the recipe. So good. Best grilled chops ever!
So delicious! I brined my pork chops first (in 4 cups of water, 1/4 cup kosher salt) for a few hours in the fridge. I left out the cayenne but otherwise followed the recipe exactly. My 9-year old loved!
This was absolutely fantastic! My chops were just over an inch thick, so i browned one side and then flipped and stuck them right in the oven for about 6 minutes while i steamed veggies. My husband thoroughly enjoyed it and we agreed it’s going in the rotation!

I’ve tried this recipe several times now and fail everytime. The sauce and idea of the sounds is amazing so I want to know what I’m doing wrong! My sauce comes out like a hockey puck everytime. The taste is there but its never a sauce to enjoy. It’s almost the second I spoon it out of the pan, its hard as a rock.
That sounds like the heat was a bit too high. :) What’s happening is that the sugars are cooking down too much and you’re basically making candy. That being said, this one doesn’t make much of a sauce, it should be more like a sticky glaze. Try lowing the heat a bit next time and see if that gives better results. Every piece of cookware transmits heat a little differently, so it can sometimes be a game of trial and error.

I made this last night and they were the best pork chops I ever made! Usually I dry them out but so moist and delicious, I followed the recipe as is except I let the chill in a brine in the frig for 30 minutes. I get mine extra thick from Costco so I had to bake in the oven for 5 or 6 minutes. Thanks!
Serra…when making extra glaze, will you please explain what you mean by put in an extra tin pan? It sounds like a great idea but I’m not that handy in the kitchen and your response has me a bit confused. ALSO, does extra liquid of some sort, need to be added during the process of making extra glaze?
I think she just means a thin metal pan. And if you want extra glaze, adding a bit of water to your metal pan and then kinda of “stirring” everything a bit in the pan to mix the water in with the juices that are already in the pan would probably get the job done. I would add about a fourth of a cup at a time, maybe. And if your chops are done and you don’t have enough juice in the pan, take the chops out of the pan and cover them before adding the extra water. Then you can either put the skillet back on the stove or into the oven/grill without have to worry about cooking them too much.
*That’s just what I’d do, and I’m just a basic follow the recipe kind of cook.*

Best time I made this was with 2 inch boneless pork chops which worried me because I normally get 1 inch. I seared each side for 4 mins in a skillet then put in a large tin pan and sprinkled extra seasoning and put them in the grill to finish cooking at 450 indirect heat. However, these were really thick and not cooked inside so I put on the actual grill for a few mins on each side direct heat until cooked then back in the pan with the juices for a few more mins. The pork chops were so juicy and flavorful. I highly recommend doing this. Especially if you don’t like to use your oven in the summer. Delicious!! Highly recommend!

I always make extra seasoning. Save some and after your are done cooking in skillet, put in a tin pan and sprinkle the extra seasoning on it. Put in the oven or grill for a few mins and a good amount of sauce / juice will go to the bottom of the pan and you will have more then enough. It is hard to get a good amount of sauce just cooked in a skillet.

The pork came out nice and tender, but the only problem was that the sauce began to caramelize too quickly before the meat was done, leading to the sauce burning in the pan. I had to finish them in the oven; the sauce with all the flavor burned leaving me with nothing to top the pork with. Be sure to use a nonstick pan for this.

Made this for the first time tonight and major success! The only thing I skipped entirely was the cayenne pepper since husband and I dislike anything even mildly spicy. I added onion powder instead and doubled the garlic. The chops were tender, the glaze was sweet and garlicky, and my notoriously picky husband loved them.
I Love this recipe! Since I don’t use oil, I Baked them…and they turned out Awesome!! I doubled the seasoning and packed both sides, put it on a rack (on top of a cookie sheet lined with foil) and baked at 400° until done. It got a really nice glaze on it, was tender…and my husband and I loved it! It was such a nice change of pace for pork chops. We do tend to like spicy food..and this was just right. Got that lil burn to the tongue and lips, but not to the throat so much. That’s one of the things we really liked about it…plus the sweet was a nice touch. I enjoy sweet & spicy. I’m happy to say…Not too sweet. Pretty well balanced seasoning! This is one I will make over and over! Thanks for the wonderful recipe!!!!
For us, this was a miss, overall. It wasn’t without merit though. It was fast and easy to make, very much a pantry dish. I cooked solely on the stovetop and had zero issues with burning. It was on the table in 20 minutes, which included a resting period for the pork.
I did feel the flavor was a bit bland, considering the reviews and comments about the flavor and being zingy and spicy.
I would say that if you like sweet pork chops, you’ll probably like this.

Made this for the first time and it came out amazing. The only thing I did different was after the chops were done, I deglazed the fond with a little white wine and thickened the sauce with a touch of flour (I was out of cornstarch). The sauce was nice and thick and really stuck to the chops. I will be making it again!!!

Tough pork chops are the result of overcooking, so I would try cooking for less time on each side next time. Unfortunately stove tops and cookware can be extremely variable, so settings and cook times are rarely exact. It’s just one of those things you have to develop a feel for. :)

I love this recipe so much, but i keep burning it! Ive used different ovens with the same result each time, brown sugar from the black lagoon. My spice rub insists on burning almost as soon as it touches the pan, even though ive tried turning it down to closer to medium low it still burns. I wouldnt mind being able to enjoy this the way its meant to, im just glad my SO still loves the dish even when its burnt. (Porkchops dont come out burnt, if anything they come out undercooked)
What type of skillet are you using? And do you perhaps have an oven thermometer? They’re pretty reasonable and can be very helpful. In my previous house our oven ran 10 degrees hotter than what it was set at!

I made these pork chops with the Smoky Roasted Sweet Potatoes as recommended in the post as well as the Honey Balsamic Carrots and it was hands down the best meal I’ve ever made in my life! It was smoky and sweet with just the right amount of heat. I couldn’t get enough! On a side note I used the Splenda brown sugar blend to cut down on the calories and it turned out wonderfully.
I made it and I didn’t use the full amount of cayenne and pepper. It was still a bit spicy. I cooked the pork in an iron skillet and it came out perfectly.
I made some more glaze with honey(2-3tblspns), a few table spoons of water in a small sauce pot. Thw was a bit liquidy and tasted good. I added about 2 tablespoons(or to taste) of remaining glaze from the iron skillet and dipped the pork in it and put it in the oven to finish cooking since I used thick pork. Then I drizzled the extra on the pork before serving. It came out delicious.

I have made these several times and they are always amazing. I pan fry mine just enough to caramelize the brown sugar then bake it in the oven to finish cooking. They turn out so tender I can never just eat one. It is just myself in the house so I use a thicker cut chop ones that are about a 1 1/2 – 2 inches thick and just use 2 just as good the next day. 🙂
Hard to pan fry without burning. It smelled great but was way too spicy, it didn’t matter the glaze was a sweet flavor. I suck at pan frying to cook pork chops well so I had to put it in the oven on 350 to make sure it was cooked.

I’ve never been able to successfully use this rub on porkchops and NOT burn them. Maybe I’m just not a great pork-chop cooker…who knows. But what I do know is that I took this rub and have been using it on salmon for a few years now and it is AMAZING. Since salmon cooks a lot quicker, it’s harder to burn the glaze unless you just way over cook the salmon. But seriously, this glaze on salmon has been a favorite in our house for a while. Just wish I could get it right on pork chops.

I so wanted to like these, but the amount of sugar means that it’s hard not to burn them, and then the heat is too low. The result was very tough even though I didn’t cook them very long. Next time (if there is one) I will be sure to brine the chops first to tenderize them. I think it would be delicious made with chicken thighs.

Would these work in a cast iron? It’s the only oven safe skillet I have at the moment.
It should work fine, but I’d lower the heat under the skillet a bit. Cast iron retains heat very well, so when you have your burner set lower the skillet will be a bit hotter than other types of cookware.

I never cook pork – but we had pork loin chops and this recipe was perfectly sweet and spicey, and super easy! The pork loin chops were thin, so I just cooked them in the pan for 5 minutes each side, and done! Quick and Easy, Juicy and Delicious! I will definitely be making this again! thank you!
I made these tonight, but added a little twist… bourbon, about a quarter cup with the last 10 minutes in the 350 oven…. amazing!!! Tender juicy, the taste was second to non.

Made this recipe for my husband, tonight. Followed the recipe, except I added a dash of ginger powder to the rub and used bone-in chops. Didn’t use the stovetop – I cooked them in the oven for 15 mins on each side. He was very pleased and loved the kick the cayenne gave them. Will make again!

My family is always looking for bold flavor and these hit the mark. A great easy recipe. I brined my chops for an hour before cooking to ensure that juicy texture. You did not specify, but I used hot paprika for a little more punch. I also made a double recipe of the seasoning and I am glad I did because there was really nothing like in your picture to dredge the chops in. I added the little left over seasoning to the skillet and spooned over chops and served with a side of mac n cheese. Love this recipe.
Made these for dinner tonight and they were delicious! I agree that the small amount of Cayenne adds a lot of heat, but combined with the brown sugar it was so good!
Can you cook them just in the oven or do they need to be on the stove?
The quick heat of the skillet is what caramelizes the sugar and spices on the outside of the pork chops and keeps them juicy on the inside. They will turn out differently if baked.

They will not turn out the same, unfortunately. The crock pot is a wet heat environment, so you won’t get any of the caramelization that you would in a skillet.

I have thin pork chops will the coking method changed?
They will cook very quickly, so just keep an eye on them in the skillet and flip them when they’re browned. You won’t need to bake them at the end because they will cook through in the skillet.

Just skip the cayenne and you should be good. :)

Turned out exactly as described. These days, pork chops are so lean, I rec. cooking only 1-3 mins per side, the let them rest. Now oven needed. They had a nice sweet-hot Smokey, lingering taste. Great!

Yes, absolutely. I’d use a meat thermometer to make sure the internal temperature reaches 140ºF.

You probably won’t get the same browning action and the longer bake time needed to cook them through may end up making them tough. I’ve never tried it, though. That’s just my best guess. :)

No, unfortunately, to achieve the correct texture you really need brown sugar.
My pork chops always burn and im cooking them on med. Is it the sugar?
Yes. I’d try lowering the heat. Unfortunately every range top is different and every skillet transmits heat a little differently as well, so recommended heat settings always have to be taken with a grain of salt. You do want the sugars to caramelize a bit, but if they are burning too quickly you can simply turn down the heat a bit so that they caramelize more slowly.
I don’t have any cayenne pepper. Basically I have brown sugar I have garlic I have salt I have pepper but that’s about it what can I do with this?
You can use those with this technique, but because you’re missing many of the ingredients, the end flavor will be quite different.
When do you put them in the oven and for how long cause it says pre heat to 350F
In step 4: If your chops are greater than one-inch thick, transfer the skillet to the preheated oven for another 5-10 minutes to finish cooking. Test the chops with a meat thermometer to make sure the internal temperature has reached 145ºF. Cook longer if needed.
I’m going to try these tonight! I have no cayenne powder, so I’m using smoked paprika. I also added a dash of cinnamon. Finger crossed that I don’t screw them up.

I had super thin pork chops (seriously, like paper… Never again!) so mine turned out very dry but the flavor was awesome and I’ll definitely try the recipe on some thicker chops next time.

Very tasty. I had prepared 8 pieces of pork loin chops. I definitely suggest to double the spices and brown sugar as there was very little glaze. I went ahead and prepared more brown sugar /spices to bits remained in pain with oil to make a sauce. Spooned over top and broiled in oven for 10 mins. A true hit and will be making this again.
Grilled mine under the broiler. 10 minuets total!

These were amazing! My husband and I bother loved them and so easy. It took about an extra 20minin the oven for mine but they were quite thick. This is my go to way of fixing our pork chops now.
This recipe was delicious! I used Bone In chops from Trader Joe’s and they were super thick so oven time ended up being about 30 minutes! It was well worth and me and the fam LOVED it

Why oven on?
To bake them for a few minutes at the end to make sure they are cooked through (step #4). If you have thinner chops you may not need to.
Honestly, I thought these were terrible. I ended up using A1 steak sauce after all said and done. The sauce was flavorless. Positive side, my chops were juicy

I Simply just Added All ur Recipe Ingriedients & followed Majority Directions except I put Pork Chops Straight into Oven & Covered w/ Foil.
Baked for 20-25 mins on 350° .
They came out just as Tender & Juicy.

Can I use granulated sugar instead of brown sugar?
That may change the way they turn out in both flavor and the consistency of the glaze. Brown sugar has molasses in it which provides extra flavor and moisture.
I decided to make these because they seemed pretty easy and I happened to have all the ingredients. They were quick, easy, and delicious. They had a little bit of spice, but not too much. Would recommend.
Made these tonight and my boys and I loved them! I brined them for a couple of hours before cooking like other reviewers suggested – made a big difference in moistness. Mine were about an inch thick and did not need finishing in the oven. Will definitely make again!

This recipe is a treasure! I rarely make pork at home because it tends to be so dry. I decided to brine the pork chops, as someone suggested here, and it turns out really good, tender and spicy and sweet. Just use 3 tbsp of salt for 4 cups of water to brine, otherwise the meat can be salty.

my family loves this seasoning mix. we like to do it with ham steaks on the stove with fried eggs & potatoes.
The basics of this are great and I enjoyed it., but I found that it lacked the spicy for my personal tastes so I changed it up a bit and loved it. Thought I’d post it here since I got the inspiration from here:
I brined the pork for starters, just because it makes cooking very forgiving, even if you go a bit along cooking your pork is still moist. Typical brine, 4 cups water, 1/4 cup salt. I also put in 2 tablespoons chopped garlic since I didn’t have garlic powder for later in recipe. I let it set for 4 hours, but anywhere between 1 to 6 hours should work.
I kicked up the paprika and cayenne to 1 tsp each for more spice.
After the sear(just got a nice sear on both sides, didn’t cook fully) , I tossed the pork into a separate pan the oven to cook some more and keep warm. In the pan with the goodies from searing the pork, I tossed in 2 tablespoons of butter, 1 onion sliced, and an apple sliced (both were about 1/4″ thick on outside edge). Once nicely browned on one side, I flipped them, pulled the pork from the oven and put it back in the pan with onions and apples (along with the juice that accumulated in the pan while in the oven). Once that side finish up, served the pork with the carmelized apples and onions on top. Came out a nice spicy-sweet perfectly moist pork chop!

Question about the chicken… i have Frozen chicken breast so should i cook the chicken first and then add the mixture since chicken takes longer than pork to cook ? Also, i was considering shredding the chicken since my children are more likely to eat that way. Should i cook, shred and then add the sauce mixture and just broil?! You can Use Chipotle powder, red chili powder or paprika (preferably a spicy paprika).

At the end you put it in the oven for a few minutes to finish cooking through. If you are using thin pork chops you don’t need to do the oven step.
What more can I say! The recipe was easy, cook time super short and the taste was amazing. I had my chops seasoned before with garlic powder, black pepper and adobo seasoning before I stumbled upon this recipe. Taste was not affected by these seasonings. My chops were less than 1 inch and with bone in. It was very tender and I did not do the oven step. Thank you!
I tried this recipe tonight. The glaze in the pan was beginning to burn before I felt like they had enough time, so I took the pork chops out, added a bit of balsamic vinegar to deglaze the pan and some chicken stock and let that reduce, put the pork chops back in and put them in the oven. It turned out pretty good, although the glaze was more like a runny gravy.
May I not use brown sugar and will the pork chops still taste good.
I have all the spices, except paprika. Is it really necessary, or can I use something else other than that?
I’d wait until you had paprika. Mild chili powder might be an interesting substitute. The flavor would be different, but I bet it would still be good.

Second time….. Love these pork chops! I did not put back in OVEN only because it’s hot summer time right now!! I kept them in the hot skillet and added about a cup of water put the lid on and turned the heat on med to high for 10 minutes this helps them to be tender. Thanks for the recipe

I marinated the pork, with one orange squeezed and half a lemon, for about and hour or so in the fridge. That and this rub made it so good. It also kept the chops juicy.
It didn’t really brown as much on the surface but I was still able to get a glaze.
I did begin to cook this at a very low heat on my stove top and once it had cooked through, I upped the heat and the liquid in the pan began to thicken into glaze. I didn’t have to transfer to the oven. Making it this way kept it super juicy.
Will definitely make it again with the marinade.
Amazing!! Perfect sweet/spicy combination. Turned out so juicy and perfectly cooked (I did the skillet them oven for 8 minutes and then back on the skillet for 2 minutes) the only thing I will change next time is adding a little more of the brown sugar mix for extra glaze.

A little, yes. You can adjust the heat by adding more or less cayenne.
It has a little kick to it, but it’s awesome. I’m not a fan of spicy foods. But it’s nothing real hot

I would really suggest boneless because it helps them cook more evenly in the skillet. It you’re using a thinner cut, cooking time will be faster in the skillet and you’ll likely not need to finish them in the oven.

I already have the chops with the bine so I will cook for a shorter time. Does it make sense to place it in the oven for at least 3 min to sort of bake the sauce onto chop? Or is the oven strictly for ensuring the whole chop is cooked all the way thru?

Mine turned black immediately! I used a stainless steel pan, only turned the heat up to medium, and used olive oil. I was very disappointed. I’ve never burned anything before!

This was delicious! I used cajun seasoning, garlic salt, and jerk seasoning to give it an extra kick. Then I broiled them in a grill pan with a little oil. They were a hit with the entire family.
Made these tonight. The flavor was great, but some of the sugar mixture burned and the glaze was a sticky gooey mess. I’ve had the same problem when I use marinades calling for honey. What am I doing wrong?
I think it’s supposed to be sticky and gooey. That’s part of the appeal. :)
I should have chosen different words. Sticky and gooey can be good things, but not in this case. Parts of the sauce were thick and burned, other parts (cooking oil?) were more liquid.

I would hate to eat those tough chops! Did you know that the safe (and most juicy, delicious) temp to cook pork is 145? Not sure why you would want to cook them that long. The rest of the recipe sounds delicious.
That’s the temp in the recipe, but since I only looked at it late yesterday, it may have been in response to your comment. Pork is actually quite safe to eat while still a bit pink–trichinosis has not been a problem in this country for decades, so there is no longer any reason to cook pork to shoe leather status. I’m with you about overcooked pork, and I think that many folks who don’t care for pork have only tried dried out overcooked cuts. At our house a quickly cooked pork scallop or succulent chop is a fast and easy meal for busy days. My husband enjoyed this glazed version a lot, but it was a little sweet for me.

They will probably cook much faster and since they’re smaller, you most likely won’t need to finish them in the oven.
These were SO easy and SO delicious. This is only the 2nd time in my life I have made pork chops. I am typically not a huge fan of pork, but these were yummy. I found myself sneaking spoons of the sauce ;-)

This was truly a ferric recipe. The only think I will change when I remake the recipe is change the amount of cayenne pepper. I like a little kick but it was a little more than my taste buds could deal with, will use a pinch only. I used a 1/2 cup of brown sugar and smoked paprika ( instead of plain ) and the flavored were amazing The meat was tender exactly the way we like it!! It will go in to my monthly recipe . Thank you fora new way to cooking chops as it is one of our favorite meats❤️

Another fantastic recipe. I made this exactly as written.
I had the same problem as several others in the comments where I followed the recipe to the tee but my porkchops were left raw in the middle. I had to leave them back in the oven for another 30-40 minutes, but unfortunately I over-did it. I kept pulling them out every 5 minutes for the first 15-20 minutes because I didn’t want to overcook it, given the recipe only said 5 minutes!
I added the leftover glaze that formed in the frying pan into the baking dish when I went to bake the pork chops. I made creamy mashed potatoes and the extra sauce after baking accented the taste of the potatoes. It was a hit!
My husband loved this recipe. However it is a little spicy for the kiddos. Their eyes watered the whole meal. I will make this again however I will cut cayenne and paprika in half. Thanks for sharing!
I cut out the Cayenne and just used Paprika. I use Paprika in a lot of my foods to give it a crispier taste and color and haven’t experienced any spiciness.

I loved the recipe minus the cayenne powder, however I followed your directions to a T and the only problem I had is the pork chops weren’t tender. What can I do differently to make them tender next time?
Try lowering the heat just slightly. It might have been that particular cut of meat as well. It’s hard to say, but I’d try the heat first.
Horrible recipe. Followed it exactly and chops were still completely raw in yhh centre. Had to cook at a higher temperature for 1/2 an hour more to get them cooked.

One recipe says 4cups of brown sugar then the next one says 1/4 cup so what is it ? Is that for one pork chop.or all 4?
It’s 1/4 cup for all four pork chops. I’m not sure where you’re seeing the 4 cups, is it on Pinterest? They use an automated system to pull recipe ingredients and it always messes up, so I wouldn’t trust recipe info that you see in pins. :(

Just made it and it was quite delicious. Had to use three instead of four pieces of meat, and had to use chicken instead of pork but it tasted excellent overall. Next time I’m going to try dialing down the amount of hot spices added to it though, ended up being too hot for the other dinner guests.

Can you use coconut oil instead of olive oil and chili powder instead of cayenne? Trying to avoid going to the store!
Coconut oil will probably work just fine since it has a high smoke point. Chili powder will give this a different flavor, but I think it will also be fantastic.

I made this pork chops for dinner tonight. They turned out great. They were very moist and juicy, and flavorful, perfect mix of sweet and a little spice. I served them with a side of green beans with shallots as well as applesauce. The coolness of the applesauce was a nice contrast to the spice in the pork chops. Definitely going into the recipe box!
But you forgot a few steps! You forgot to include the part where you have to hang the pig by its legs, slit its throat and cut it up into bits of pieces because you feel like eating meat is the only way to get your protein!

Vegans are no less guilty than meat eaters. By being vegan, they support the clearing of land for crops which requires the innocent destruction and murder of thousands of wild animals that were simply just trying to live. Also, crop farmers continue to trap & kill any animals that endanger their crops. Mice, rabbits, gophers, moles, rats, deer, etc.
Also, burrowing animals that damage & destroy roots. Foxes, badgers, snakes, etc. At least meat eaters actually use the things they kill. There is no less shame or guilt being vegan. Let’s face it, God gave us the earth & resources to survive with. That’s exactly what we are doing so to each their own. I can’t wait to try this recipe tonight.

Yep, that sounds like the best plan of action to me. The one thing you *don’t* want to do is crowd the pan with too many chops because that will prevent browning. So, definitely do that step in two batches.

i told my husband to take out pork chops, so i mixed the spices and when i pulled the meat out it was a roast, well good thing it was early. I still made the reciepe only with the roast. It was awesome thanks
I tried this last Sunday and I fell deeply in love. I added less spice but i still liked it. My only problem was that I didn’t get much glaze to form in the pan when frying it was more oil (i did pat them dry) but other than that they were perfect the flavor and texture was nice.
I had to use 1 cup of Brown Sugar to get the glaze effect. I used the extra glaze in the baking pan to go with the mashed potatoes I made and it was amazing.
i don’t cook very often, so when I do I follow recipes to the T. These burnt so bad I had to toss them. Medium-high was way too high!

This was so delicious!! Easy as pie! Definitely trying it again and the pork chops were so tender! I cooked it on medium since mine were thin cut. The only problem I had was the brown sugar burnt a little. It was still so good. I also made homemade sweet potato fries with evoo, salt, pepper, garlic and Parmesan.
I made these tonight in a cast iron skillet on a gas grill. They were delicious and didn’t take very long to cook. Heat at medium and indirect.

I’m not sure what I did wrong but my chops weren’t BURNT. I even lowered the heat to medium after flipping it over and it didn’t make a difference.

By the way, the first batch browned pretty quickly, I used a cast iron skillet, I just set the heat back a bit, and that did the trick. If your chops are burning, turn the heat down.

Followed this recipe to a T as well and the glaze burned horribly. The instructions said to get the oil “very hot” and cook on medium/high for 5 minutes on each side. It was badly blackened after 2-3 minutes on the first side. There is no way medium/high heat wouldn’t burn this rub.
It also depends on the type of skillet you have. The thinner the skillet, the easier it will burn.

hi, can you tell me what I’m doing wrong? I’ve made this recipe about five times and each time it doesn’t turn out. All of the spices somehow cook off of the chop (besides the cayenne, the are spicy), and the glaze that forms in the pan solidifies before I can use it. I’m not sure what to do, I follow every step, I use the right about of rub, I use thick boneless pork chops, and I cook them just until they’re done. I can tell the chops aren’t overlooked, but I would really like it if they had glaze left on them and even left over when I make them.
Hmm, that’s a tough one. Try drying the chops off with a paper towel before coating with the spices. I think there should still be enough residual moisture to help the rub stick. Maybe they were just too wet? Also, try lowering the heat in the skillet just a tad so that the glaze doesn’t cook until it’s hardened. Finally, maybe try adding a little more oil to the skillet. Perhaps having more of a barrier will help the glaze stay on the chops instead of on the pan.
I tried this and I wrapped the chops in aluminum foil before putting them in the oven. I think it helps to really seal in the flavor. Not sure if that helps but maybe worth a shot?

Beth, I am having a dinner party of 10. Hate to be frying chops while people are coming in the house. If I fry them and put in oven on low and covered, them, how long before they get too dry. It looks so good really wanted to have them.

This is my M-I-L recipe, she usually adds 2 Tbl water to make a sauce. Coats one side and puts in oven at 350, depending on thickness of chop but usually 30 to 40 mins. Turns once and coat other side half way through. I have also made these in the crock pot. Very yummy!

another Pinterest dinner success, cooking these now and they smell/look/taste absolutely amazing, instead of using half a teaspoon of my spices I went ahead and did a full teaspoon, turned out great. A good spin on southern pork chops
Just finished making this and it’s delicious. I added a tiny bit of cinnamon and some turmeric to the rub as well and it came out great. Also super simple and takes almost no time at all. Served with some roast squash.

Oh, I also forgot to add, the oil thing is called shimmering. If you want to go hotter and wait for the oil to smoke to get a really good sear on the meat, then use vegetable/canola oil. It has a higher and less carcinogenic smoke point! :-)

I followed the recipe exactly, with the exception of putting the chops in the oven. I used my electric skillet and cooked the chops to perfection. I do not like extra steps or extra clean up. I found putting them in the oven was not necessary. You either brown the chops and put it in the oven, or do it all in a skillet. Works both ways.

I’m not sure without testing it. Skipping the skillet step will change the way the sugars caramelize, too, and yield a very different result.

Hmm, I don’t think it would coat the meat as well. The whole thing will let off quite a bit of liquid and most of the spices would be swimming around the meat. But that’s just my best guess. :)

Made these tonight. I doubled the rub mixture and was glad I did. My pork chops were large with bone in, so I cooked in the oven for 10-15 minutes and checked with a thermometer to ensure they reach 160F. A great balance of sweet and spicy. Will make again!

I just made these ten minutes ago. I’m a novice cooker. If I can do it, you can. My pork chops were thin so I did 3 mins on each side and then 3 in the oven. They were amazingly tender. I can even describe how pleased I am with how they turned out.
Your tip to put water in the hot pan to aid in the clean up is the worst idea ever. Do not do this. It will warp your pan.
I think you read it wrong, she said to put water in the pan while it is WARM. Big difference.

Had these tonight, and the flavor was AWESOME, but my chops were tough… Do you suggest tenderizing them prior to, or any other suggestion?
They may have been a little over cooked. As meat cooks the protein fibers constrict and squeeze out moisture, making them dry and tough. So maybe a minute or two less will do the trick.

I am a broke college student and made these tonight for Easter dinner. I followed the recipe to the letter and mine turned out dry and flavorless, to the point that my boyfriend and I could hardly saw through them. I’m wondering if my oven is just way out of whack and needs calibrating…so sad
Pork is a meat a lot of people overcook. That said you want your chops a little pink. If thick yes brown both sides but I say only a couple min then oven for 5/7 min. Let rest 5 min before serving. Bone in? Then DO NOT put in oven . Remember slightly pink is your goal! That way you will be insured a tender juicy chop.
These look great! And a quick and easy dinner dish that is something new, which in my house is always a plus. You said about price shopping for the pork chops, and I know this is an older post. But have you considered buying a big boneless pork tenderloin then cutting it up? I buy at Sam’s but just did that for the first time. Spent $15 on the tenderloin which was close to 2ft long and ended up getting 4 gallon sized freezer bags with 6 chops in each out of it. It’s cheaper in the long run because I was paying $12 for 6 originally.

I am going to make this again tonight ( will be at least my fourth time doing so). However, the first couple times, my hubby didn’t enjoy the heat of the red pepper. So I omitted it, and only put paprika in the second time. It was still spicy, probably spicier than before. What would you recommend for the person that does not like spicy food?
It sounds like you have “hot” paprika. Look for a “sweet” paprika, which has no heat to it (it may not be labeled with the word “sweet”, just “paprika”). The regular McCormick paprika is mild/sweet.

Well, if you bake only, you won’t get the nice caramelization that happens in the hot skillet. I’d have to test it out in the oven to see how long it would actually take.
You definitely can! I have a recipe that calls for 1/4 c of brown sugar, packet of Italian seasoning, and boneless skinless chicken thighs. I cook it in the oven at 375 cor about 45 min. Nice caramelization. My daughter calls it “candy chicken”. Just make you use foil or parchment paper.
This recipe is definitely for thick Iowa chops! The outside looked great, but they were nowhere near done after baking.
The glaze is amazing, though. I’ll adjust for longer cooking!

I am teaching my 14 year old son to cook (8 in my family- 5 guys so meals can be challenging) We found your recipe and he was so excited, a recipe that wasn’t too complicated and versatile enough that he could season without help. He planned and executed dinner with the minimum of help from mom. He used brown sugar, Mediterranean Sea salt, ;a new acquisition he couldn’t wait to try :), smoked paprika, California style Garlic pepper, onion powder, BBQ seasoning, freshly ground black pepper, and chipotle seasoning for heat. (We love spicy), he added butter and peanut oil to the seasoning mix, I admit I was intrigued, it looked like a thick sticky mess. He spread half of the mixture on one side of the chops and kind of squished the chop onto a baking dish, then rubbed the other side down with the rub. He finished up by piling the excess on top of each chop. He covered them super tight and left them to “hang out for a while”. He followed the rest of the recipe to the letter. He finished dinner with homemade Mac and cheese, oven roasted brussel sprouts (his fav vegetable, go figure), and “Kings Hawaiian rolls” (his idea). JUST AMAZING” I know this post is long and a little rambling, I wanted to share how much you inspired my son. The chops were very thick ( I usually cut them myself), but so tender they almost melted in your mouth. So tender my husband took leftovers to work, not a usual thing. He works in a prison and guards can only bring in plastic utensils.
I can only only encourage people to give this a try, they were just so good.

I am trying not to use my oven do to a propane issue and was wondering if you think these could be cooked in a slow cooker or in the skillet?? They look so yummy!
You might be able to do them just in the skillet if you lower the heat and let it caramelize slower, so the inside has time to heat up. I wouldn’t recommend the slow cooker, though, because it will take far too long and cause them to turn out more like pulled pork.
You can definitely finish these in the skillet. I caramelized the chops more slowly then turned off the heat, put a cover on the skillet, and let them hang out for a bit. They cooked to perfection. These is one of my favorite chops recipes. I make certain to have enough for left overs. They are fantastic on a spinach salad.
This recipe looks wonderful but family and I are not spicy food people at all. Boring, I know. Would you suggest leaving out the cayenne pepper or using something else in it’s place?
Yes, I’d leave out the cayenne (that’s the only spice in the mix with heat) and maybe double the paprika. If you can, get smoked paprika because that will give a nice smoky flavor to make up for the lack of heat.

This is my favorite recipe by far I’ve made these several times and it’s always a big hit! I’m having a group of 4 over this weekend and I really wanted to make these but I was thinking of doing a full tenderloin instead. You’d definitely need to bake it longer. Sear it in the skillet, just like the chops and then let it bake about 30 minutes at 400, or until the internal temp gets to 160. It won’t have as much surface are covered with the nice glaze as chops do, though :(
I have thin cut pork steaks, a little over a half inch thick. Any ideas on how long to cook or whether or not I should do the oven step?
You might be able to skip the oven step, depending on how long they take to brown in the skillet (which will depend on the type of skillet and the level of heat). You might have to cut one open to find out.

I don’t have ground red pepper can I use flakes or something else?! Home with 2 sick kids & the baby so I can’t run to store.
You can try the red pepper flakes, although it might be slightly different because the heat won’t be even throughout. If you have some sort of small grinder or food processor, you can put the red pepper flakes and the rest of the dry rub ingredients in and blend it up to be more like the ground red pepper.
I made these with crushed red pepper and it turned out awesome. I added quite a bit because I really like the heat. But the sweet and spicy balance was nice.

I didn’t have time to mess around with browning these on the stovetop and then transferring them to the oven since I was making a lot of different food at the same time. So I added some apple cider to the spice blend and then marinated some boneless chops in that liquid in a 8×8 baking pan. When it was time to bake the chops, I stuck the pan in the oven with the spicy cider and baked for 20 minutes. The result was huge hit with my family.
How much apple cider did you use? Did any of the spice come off due to apple cider being introduced to the spice mix?

I did this with chicken legs but added 1/2 tsp of chili powder. It was a nice balance of sweet and spicy. The kids raved over it.

please don’t put it on medium high! i almost burnt the house down! i did medium high for like a minute and it started burning like crazy!
I had the burner on medium-high too. Liquid in the pan turned black after about two minutes and the porkchops were charred. I used a new stainless fry pan and I think the oil started to smoke before I added the chops, so not sure what exactly caused it. First time that I’ve botched a recipe from here. :-/
I tried this recipe because I had all of the ingredients & I wanted to make a glazed pork chop for the first time. It turned out to be way more than I anticipated!! SO easy, and the rub makes a lovely thick sauce that almost similar to a homemade spicy bbq sauce. (I added a tiny bit more than 1/2 tsp because I love spicy) It was absolutely delicious and will be adding it to my repertoire! Thanks for the share – I will be enjoying this one for a long time :)

Word of advise: try to clean off your skillet before the glaze hardens or else that sauce is not coming off in the dish washer. Awesome and easy recipe though! Definitely will do it again.
I am in the process of making these right now. I added a bit more brown sugar and a little less cayenne pepper. It smells amazing. I am paring it with homemade loaded mashed potatoes, corn on the cob and garlic bread. Can’t wait to take a bite. :)

Yes, you can just add more cayenne to turn up the heat. :) I would suggest tasting the spice/sugar mix before adding it to the chops to test the heat level at that point. Heat is very subjective, so it would be impossible for me to tell you just how much (or how little) to use. Your taste buds are your best measure. :)

Wow are these amazing or what?! I swapped the brown sugar with 3 Tsp. of mango chutney. Got the same effect with a little more flavor.

I had 6 thick chops (instead of 4) and I had to almost triple the ingredients! But, it turned out wonderful. I had to bake them for almost 10-15 minutes after I browned them though. Thank you very much!
Made these tonight and they were a hit!!! I added just a little bit too much oil so theh didnt get that glazed crispyness to them but were still delicious!!! My 2yo even ate them and she is picky about meat so ill definitely be making them again!

These are great, and so easy! The only thing I’m going to do differently next time is remove them from the skillet when done, tent them with foil, and boil the sauce on the stovetop till it’s thick & syrupy.

Well, even if you brown them before, cooking them in the crock pot will drastically change their flavor and texture. It will probably still be delicious, but it will be something completely different. … so I guess the answer to that is, no, browning first isn’t necessary. :)

Anon – That sounds like it would be delicious. I’ve never tried marinating in just plain apple juice, so I’m not sure how it would affect the tenderness.

I tried these last night. Omg just wonderful. It has a sweet and spicy kick to it. I didn’t have ground cumin, but I added 1/2tbs of red chili flakes. Just great. I’m far from being a good cook lol but I was able to do this without setting off the smoke alarm. :-) Everyone has to try it. I did let the pork chops marinate in the spices 30 mins before cooking.
Let me just say it’s probably not a very kid friendly recipe. That being said my husband and I absolutely LOVED this recipe!!! Husband even said it ranked in his top five favorites. I followed the recipe exactly and it turned out tender and so flavorful. (my 12 year old daughter loved the flavor but got thru about half her chop and then passed the rest to my more than happy hubby because of the spice & my 11 year old took two bites and finished off his milk ;-) I’ll definitely make this again but I’ll do a mild version for the kids and a knock your socks off version for me and the hubs. I made these for my boyfriend and myself the other night and we loved it. It was a tiny bit spicy, but the brown sugar made for a great combo. My chops did cook really fast with the oil at med high. I caught it before they started to burn, so just make sure you pay attention, no big deal. Definitely will be a repeat entree, though!

These were the most amazing pork chops I have made in awhile. Sweet, yet slightly spicy and extremely juicy. YUM! My 7 year old, who is a picky eater ate these and asked for more.
Anon – I’ve never cooked them in a crock pot and I don’t suggest it because you won’t get a nice glaze like you will with this method, you’ll end up with something completely different.

Anon – you won’t be able to get these same results in a crock pot because it will create too much liquid. It will probably still taste good, but you won’t get a nice glaze like this. I’m not sure what method the reader used to make them in a crock pot.

I just made these. The first 2 chops were burnt with medium heat, I turned it down to low for the others and it worked out better. I used a cast iron pan, not sure if that was the problem or not. I transferred them directly to the oven for 5 minutes. They were very dry. I recommend marinating them beforehand. It had a great taste to them, it has potential!
Anonymous – Yes, a pork loin would work… after all, the chops that I used were a loin in their prior life (before being sliced into chops)! :)

i have a very picky 8 year old lil boy and he loves these. thank you for sharing the recipe. normally, he only wants mac and cheese even if i prepare a huge meal; but i tried these and he constantly requests them. they are easy to make and delicious.
Same problem as above. I had to turn the heat down quickly because they were burning after 2 minutes on the stove. I would rather cook them slow on medium (even around a 4 or 5) and just wait then bake to be sure they are done (and check with a thermometer). The sugar burnt all around the edges on mine though and the sauce didn’t really go thick, it just went watery and burntlumpy. But tasted awesome.
Still delicious, but nearly ruined them! Oops. I am still learning, lol.
I made these as suggested and mine started to burn after about 3 minutes so I had to take them out so they were still edible. The sauce was not thick at all. The taste was good and my husband liked them so I will try again with a lower heat setting and will experiment with the sauce to make it thicker

Jelsey – Yes, it sounds like you should probably lower the heat a little. If your stove top runs hotter than mine or your skillet has a thinner bottom, they’ll cook faster. You just want to make sure that they don’t cook so fast that the inside doesn’t have time to heat up. So next time, try lowering the heat and just flip them when it reaches a deep golden brown color.
I just tried these and I am not sure if I left them on one side for too long or what but after 4 min. they were black on one side. How can I get them to not get black and crusty? Should I lower my heat in the pan or should I just not leave them for 5 min on each side?

I’m sorry to hear that! It could be because of the thickness/thinness of the bottom of your pan and/or differences in stove settings. But, a fantastic cook is not made without at *least* a few disasters. Sorry again!
Ok… so how do you keep them from burning? I just ruined the entire meal. I only cooked them on the first side for 3 minutes and when I turned them over they were completely black and inedible. Set the heat to what you indicated… ?
Heat down, slow cook them in the pan, and if that doesn’t work, put them in a sprayed glass pan and put them in the oven for about 5-10 minutes. After that, flip them over, and same 5-10 minutes.

I made these last night. My hubby came in right before I put them in the oven. He made me transfer the chops to a different pan to finish them off and he made a sauce using the pan drippings. He loves to make sauces and it was perfect over the mashed potatoes I served with the chops. I also made zucchini fries. My hubby said he’s gladly pay $20 for that meal at a restaurant! This is awesome! I made one mistake, and that was making the wild rice with it that you posted. The reason being is that the pork needs to be in the oven at a diff temp as the rice, and that rice takes FOREVER. LOL! Green beans would have been a better option. I like the easy factor of the pork chops, so I should make the whole meal easy. Oh well. Lesson learned.

I made this a few days ago and we loved it! I went ahead and cooked mine in an electric skillet on lowish heat because I have a seriously small european oven and was using it to bake potatoes! Thank you so much for a delicious recipe!
These look delicious. I’ve made something very similar with bone-in chicken where I brined the chicken for several hours and then coated in the same spice rub before baking, and it was awesome. :) Also liked to share that if you have a pan with a non-oven safe handle, you can wrap the handle a few times with aluminum foil and that will protect it from the heat so you can transfer straight to the oven. Less dishes to wash!
