Today’s post isn’t as much a recipe as it is a meal idea or example of how I build meals on the fly based on what I have in the refrigerator. I’ve posted about my savory breakfast bowls before, but I’ve recently discovered a new bowl-changing ingredient, hummus. Hummus adds a creamy, tangy element to the bowl that really takes it to the next level. And since I made FOUR flavors of hummus the other day, I’m pretty much in Hummus Breakfast Bowl heaven this week! :D

Start Here, Then Make it Your Own!

If you’re a savory breakfast lover like I am, I think you’ll really love the convenience and flexibility of these hummus breakfast bowls. All you really need to keep on hand are eggs, frozen broccoli (or spinach), cooked rice, and hummus. Those are the main components. Everything else is flexible. Some other things that I like to add to my breakfast bowls on occasion are: sriracha, sesame seeds, kimchi (using both kimchi AND hummus can be a bit much, but I grew to really enjoy it), sliced green onions, coconut oil (mixed into the warm rice and broccoli), leftover rotisserie chicken, or any other vegetable I have hanging out in the fridge.

Ingredients

  • 1 cup cooked rice ($0.19)
  • 4-5 frozen broccoli florets ($0.21)
  • 1 large egg, soft boiled or fried ($0.27)
  • 2 Tbsp hummus ($0.19)
  • Pinch of salt and pepper ($0.05)
  • Pinch of sesame seeds ($0.05)
  • Sriracha to taste ($0.05)

Instructions 

  • Soft boil or fry one egg, leaving the yolk runny to provide extra “sauce” for the bowl.
  • While the egg is cooking, add the pre-cooked rice and broccoli florets to a bowl. Microwave on high for one minute, or until the rice is hot and the florets are warmed through.
  • Add the hummus, cooked egg, and a pinch of salt and pepper to the bowl with the rice and broccoli. Drizzle with sriracha and sprinkle sesame seeds over top. Enjoy!

Broccoli for breakfast isn’t that weird!

There aren’t step by step photos for this “recipe” because you literally just pile everything in a bowl and eat it. I will say that I like to reheat the rice and broccoli florets in the microwave as I cook my egg, bringing the total prep time for this breakfast to about 10 minutes. Sometimes I do fried eggs, sometimes soft boiled. Click here for instructions for making PERFECT soft boiled eggs. It’s so easy.

I know all you sweet breakfast people out there are probably recoiling in disgust right now. Ha! :)

I just want to let you know that throes has become my go-to quick, easy, and cheap meal for any time of day. ย I love it soooooo much! ย I like to use Sabra’s Supremely Spicy humus and usually use two eggs for added protein. ย Also, rice is pretty much my staple carb, but I also wanted to let you know that this is also absolutely fantastic when the rice is subbed with a plethora of veggies (I have been using a frozen veggie blend from Sam’s, frozen spinach, and avocado in combination with the broccoli) for my low-carb days. ย Thank you so much for this one – I want more! ย โค๏ธ

  3. Even though I love hummus and frequently make it, and I pretty much exclusively eat savory breakfasts, I thought this idea was so weird. I can’t remember what actually prompted me to try it, but I have to tell you that I was so wrong – this is delicious! This is exactly my kind of breakfast and it’s what I’ve eaten for two weeks straight now. Last week I had kale, white beans, and farro with lemony hummus, and this week I had lentils, chard, and your yellow jasmine rice (which was fantastic) with roasted red pepper hummus. Both were tasty and filling!

  4. Made these tonight for dinner! So good! I subbed with cauliflower rice and added some cut up cooked kielbasa (because my son doesn’t like eggs). It is definitely going in the rotation!! : )

  6. I think I’m a bland breakfast person… too sweet is gross and too savory is also gross. Most days I end up with two pieces of toast, butter, and cheese. If I’m feeling ambitious I’ll have some fruit with it. I need to be eased into mornings, but the hummus, rice, and egg sound good maybe leftover roasted cauliflower? Nix the hot sauce too aggressive in the morning.

  7. YUM! Just discovered your blog two days ago thanks to Buzzfeed and got to work! Yesterday, I made your hummus (jalapeno cilantro) and the mushroom garlic chicken (which I paired with some basmati rice)- both delicious and so easy. This morning I used the hummus and leftover rice to make this bowl because it just so happened that I had the rest of the ingredients sitting around. So good! I’m sitting here typing with my bowl right in front of me :)

  10. I tend to slap some hummus on most things these days. It’s also a super quick salad dressing/sauce if you thin it out with lemon juice and water.

  11. I’m SO a savory breakfast person! I’m always looking for savory breakfast ideas, and even though I have three hens who give me eggs, I sometimes get burned out on eggs. I’ve recently started eating a savory breakfast of sauteed beet greens and asparagus (served cold), hummus, baked sweet potato cubes (served cold) and a kale and shredded brussels sprouts salad with garlic dressing (also served cold). All that as a bowl. Easy to prepare, can do several at a time (so they’re in the fridge and ready to grab and go). I usually grab a pita with mine and sprinkle on some sesame seeds right before eating.
