Top 10 Recipes for Freezer Leftovers

I use my freezer a lot. I love to stock it with leftovers from cooked meals so that I have a constantly rotating stock of single serving dishes to choose from on nights when I just need something fast. Figuring out which recipes are best for this purpose does take some experimentation, though, so I’ve done some of the heavy lifting for you and put together this quick roundup of my top 10 recipes for freezer leftovers.

In general, I find that soups, stews, pasta or rice based dishes, and baked goods all freeze very well. I reheat almost everything in the microwave without thawing first (because I’m lazy and impatient), but soups and stews can easily be reheated on the stove in a sauce pot over low heat (add a lid and don’t forget to stir!). Baked goods will thaw quickly at room temperature, or can be warmed with a quick 20-30 second zap in the microwave.

  1. Here’s a freezer question please: I made an eggplant dip that’s oil-based (no tahini) with lots of fresh herbs and garlic. Do you think it can freeze well or not so much?

    1. It might separate a little upon thawing, but I bet it would be fine after you stir everything back together again. I’ve seen a lot of tutorials about freezing fresh herbs in oil, so I don’t think the oil will be an issue (other than temporarily separating out from the dip).

  2. I really like to freeze down chili, black bean soup, meat sauce and most of all the bowl meals! Like the shredded beef burrito bowls, and sweet n’ spicy chicken bowls best! Not only are they great for days I’m too tired to cook, or sick, but they are excellent for those long days at university. I always mean to freeze down the african peanut stew, but I always gulp it down in delight before freezing. I also always have frozen berries in my freezer, for my oatmeal! :)

  3. I have a love hate relationship with freezer food :D I LOVE putting it in there, but then I don’t enjoy actually eating it for dinner another time. Luckily my husband does, so I stock the freezer for nights I get home late or if I’m out of town. I have frozen the meat version of your chili cheese mac because geez it made a lot, and my husband loved pulling it out of the freezer-that was one of his favorite meals ever. I love to freeze chili in general because even I like that out of the freezer. I’ll also freeze left over white rice, left over chicken/pulled pork/any cooked meat in single serve bags. As far as freezing meals go, I normally don’t have enough leftovers because I eat leftovers for lunch the next day, but whatever doesn’t get eaten by the end of the week goes to the freezer stash! Oh I’ve also frozen breakfast burritos–I feel like you might have posted a recipe that gave me the idea!

  4. On a very regular basis, weeknight chili (in a 2 cup container) and chili rubbed pulled pork (in a 1 cup container) are in my freezer. I pack lunches for my son and husband every day, so pulling something from the freezer the night before saves a ton of hassle and time the next morning. I heat their lunches for them and put them in thermoses so they don’t have to wait in line for a microwave on their short lunch breaks. Usually I mix 1 cup of the pork with 1 cup of cilantro lime rice. Definitely my son’s fav! I haven’t thought to freeze the baked oatmeal, mostly because it goes so quick. I will give that a shot though. Anything to save time in the morning is worth it for me!

  5. My freezer regularly plays host to Chicken and Rice Soup, Beef and Barley Soup, Mac and Cheese, Ziti, and Stuffed Shells. When I make a pot roast in the slow cooker, half of the roast will often end up in the freezer. I often freeze leftover chopped cooked chicken, which I use for enchiladas, quesadillas, fajitas, or pot pies.

  6. I like to freeze swabian lentils and ‘spätzle’.
    These are lentils cooked with leek, celery and carrots, flavored with vinegar. Typically they’re served with smoked bacon cubes and ‘wienerle’, a sausage that is comparable to hotdogs.
    Spätzle is a kind of noodle that contains eggyolks and is very rough on the surface. Drizzle with even more vinegar ;)

    Homemade Tomatoesauce or Bolognese is also a constant staple.

    And I like to keep some of your Naan at hand, for nights when I cook some indian food :)

    1. how are you freezing and reheating the spaetzle? i’d love to keep some on hand!

      1. When I freeze any kind of noodle, I undercook them by 3 minutes, then rinse them with cold water to stop the cooking prozess in the noodle.
        Then I just put them flat and dry into a zipper bag and when I need them, I’ll but them into a pan with a little butter and fry up.

    1. Me too! I just get so busy and if I don’t have a few freezer pleasers ready to go, I’m tempted to go out to eat. And even going to Wendy’s cost our family $40!!! That’s an insane waste of money. Then I’m tempted to eat fries and I don’t want to go there because then I have to spend another $100 on a Spanx swimsuit. I love ALL these options and I’m ready to cook and freeze. Plus, I like taking weekends off cooking so it’s nice to have a lineup ready to go in the freezer.

      1. Hahahah I love the comment about having to spend more on a Spanx swimsuit. I have to concur, for a long time I watched what I ate not only to keep the grocery budget down, but because I couldn’t afford to buy bigger clothing if I gained weight! :D

  9. Soup! I currently have about 4 meals of tomato tortellini (ravioli actually, was available for a good price). When I make soup it’s usually a ginormous pot.

    Being single, and so many recipes are designed for four or more servings, I usually have to freeze a portion or two. Only so long you can eat any one dish.

    1. I think that’s the absolute best reason to freeze leftovers: you can go with the convenience of cooking huge batches, but don’t have to eat the same thing over and over for a week if you don’t want to. Luckily, my office has a nice large freezer, so I don’t even have to worry about keeping lots of individually-sized frozen meals in my own freezer…I can just bring them in to work and keep them there, then pop one in the fridge on a Monday to eat for lunch on Tuesday (or whatever). It’s a pretty great system!

  10. Frozen burritos! Roll up tortillas with refried beans, corn, salsa, tomato, cheese, peppers, whatever, then just wrap in plastic and freeze. Makes a quick snack, or serve with beans/rice/sour cream/avocado for a meal.

  12. I have Spanish Chickpeas and Rice and African Peanut Stew in my freezer right now, and I made a big batch of stuffed shells using the filling from the Garden Vegetable Roll Ups.

    Chorizo Chicken Jambalaya is another one of my favorites to freeze.

  14. I was hoping to see your baked oatmeal on this list! Baked oatmeal is the only kind of oatmeal I actually enjoy eating, and your recipe is so good! I make a pan of it each week and then cut it into six squares before freezing. Then, on busy mornings I just grab one and heat it up in the microwave at work. It’s such a filling breakfast that really feels like a treat!
