I hope everyone had a wonderful Christmas yesterday! I decided to take advantage of this “holiday hangover” day to compile my very favorite recipes of 2016. I’ve been making these year-end recipe round ups since my very first year of blogging and every year the list seems to get longer. As I sat down last night to review the recipes from 2016, I found myself writing down nearly every recipe onto my favorites list! Even after what seemed like a fairly conservative “first pass” I had 36 recipes on my list. Yikes! I’ve knocked it down some, but I just can’t narrow it down any further than these awesome Top 25 Recipes of 2016.
It was a delicious year, to say the least, so if you are new to Budget Bytes or just want to start cooking more in 2017, these 25 recipes are a great place to start! Here’s to making next year even tastier than the last!

Thai Curry Vegetable Soup – If I had to pick one recipe as a favorite for the whole year (which I never could), this would be in the running. The flavors are incredibly vibrant and multidimensional. I want to eat it every day.
Creamy Pesto Mac and Cheese with Spinach
Creamy Pesto Mac with Spinach – Because I put frozen spinach in everything. This isn’t a mac & cheese so much as it is a creamy pesto sauce with pasta and enough spinach to make you feel good about what you’re eating. ;)

5-Ingredient Freezer Biscuits – These biscuits may be the death of me. Not only are they beautifully tender and slightly sweet, but I can keep the unbaked biscuits in my freezer and bake up one, two, three, or however many I need at a moments notice. Absolutely dangerous.

Vegetarian French Dip Sandwiches – I only made these portobello “French dip” sandwiches a couple of weeks ago, but am still dreaming about them. The herb infused vegetable au jus was so good.

Vegetarian Pot Pie Skillet with a Cheddar Biscuit Topping – I’ll take these cheddar chive biscuits over a traditional pie crust any day! Eating this skillet casserole is like wrapping yourself in a warm fluffy blanket and getting cozy next to a fireplace. It’s 100% comfort.

You posted it in December of 2015 but we didn’t try it until early 2016….Slow Cooker Chicken Tikka Masala has been a once to twice a month thing here all year long. I’ve even made big batches and froze it in single serving sizes for my husband to store at work for lunch. So yummy, so easy, so affordable! Typing this has started a craving, but I already had quiche for dinner.
My favorites from this year: Roasted Red Pepper and Tomato Soup, Lime Shrimp Dragon Noodles, Greek Chicken Pasta Salad, Pasta with 5-Ingredient Butter Sauce, Beef and Cabbage Stir Fry, and Marinated Lentil Salad. All time favorite? Probably one of the recipes with ramen, honey mustard chicken strips, chicken shawarma, chicken yakisoba or honey mustard chicken salad.
Your recipes are phenomenal and easy to do. I have to say the Beef and Cabbage Stir Fry is my personal favourite. Thank you and have a wonderful new year!

Your recipes have become staples in my kitchen. You’ve taught someone who used to burn eggs how to mix flavors and use simple items to make such amazing meals! Over the last year or so since finding your blog, I have advanced so much in the kitchen and after bringing some tasty leftover to work, my co-workers also brag about your site. Cooking once seemed like a chore, but many of your dishes have made me excited to cook. The best part of it all is when you make something others request again and again.. I can’t thank you enough for that! Once upon a time, I used to get make-up for Christmas gifts, now I am getting Chef knives and cutting boards, and I couldn’t be happier!! Cooking instills a sense of independence and pride and you are truly an inspiration. Thank you for all you do! It may just be more than you think :)

Thank you so much for everything you do! You have helped me a ton in the kitchen and if it weren’t for you I wouldn’t be the cook that I am. My fiance requests your recipes all the time, particularly the thai curry soup and sesame tofu, but the chili mac also has a great reputation. I just made your mushroom french dip and it blew my mind.

Quickie Faux Pho. I made it for my soldier son when he finally came home. Joyous day with a meal that my son adores!
I would add the farro w/ chickpeas. That and the weeknight enchiladas were my favorites from this year.
The pressure cooker chicken and rice (yay instant pot!), banana coconut baked oatmeal, easy sesame chicken, pineapple teriyaki chicken thighs, taco chicken bowls, tahini kale salad, and the mango coconut tofu bowls are my favourites (so far). I’m going to try the Singapore noodles with crispy tofu tonight!
The tomato pepper soup is my go to soup. Note I find it tastes better after sitting in the fridge overnight.

The Sweet Potato Oatmeal Casserole, Weeknight Enchiladas (I made it three times this year), Spaghetti with Five Ingredient Butter Sauce, Vegetarian Pot Pie with Cheesy Biscuit Topping, Easy Black Bean Chili, Honey Mustard Pork Chops, Chicken Shawarma, All Edge Spiced Brownies, and Spinach and Feta Grilled Cheese are my FAVORITE recipes from your blog. So far, I cooked sixty recipes. I know it’s a lot, but your recipes are budget friendly. I’m looking forward to many more new recipes!!! :-)
