So you grew up on Hamburger Helper, but now you’re an adult and have a more ✨refined✨ palate (read: sarcasm). Well, this One Pot Chili Mac recipe is your grown-up “I actually know how to cook now” substitute! And don’t worry, it’s almost just as easy as the boxed mix. Promise. It’s rich, hearty, cheesy, beefy comfort food pasta all cooked in one easy-to-clean pot. WIN!

What Is Chili Mac?
Chili Mac is simply macaroni noodles drenched in a rich tomato-based meat sauce, seasoned with chili spices, and with plenty of creamy cheddar cheese melted in. Some recipes also include beans, but I’m going for more of a Hamburger Helper dupe with mine, so I went sans beans. And you might be thinking, “I call that Goulash in my house.” While Chili Mac is similar to American Goulash in that they both contain macaroni noodles and a tomato-based meat sauce, they differ in their seasonings and flavor profiles.
Ingredients for Chili Mac
Here’s what you’ll need to make your own homemade chili mac:
- Onion and Garlic: The delicious meat sauce starts with onions and garlic sautéed in olive oil to give the beef plenty of flavor.
- Ground Beef: Ground beef makes this dish super hearty and delicious, while still being quick and easy to make. Opt for 85 or 90% lean ground beef to avoid having to drain the fat from the pan.
- Flour: A little flour cooked into the sauce helps thicken it up into a delicious gravy-like consistency.
- Spices: A mix of spices are added to the sauce for maximum flavor, including chili powder, smoked paprika, garlic powder, and oregano.
- Tomato Sauce: Tomato sauce gives the sauce a tangy tomato flavor and adds to the chili flavor profile.
- Beef Broth: Beef broth adds tons of flavor to this dish and enough salt to keep everything properly seasoned. If using a low-sodium broth, you may need to add a little salt at the end to taste to really help the flavors pop. We used Better Than Bouillon to make our beef broth for maximum flavor.
- Macaroni: Macaroni noodles are an inexpensive and filling ingredient that helps stretch the cost of the beef and keep the entire recipe budget-friendly.
- Cheddar Cheese: Cheddar cheese is stirred into the sauce and added on top of the noodles for extra cheesy flavor!
What Else Can I Add?
If you want to take your chili mac to the next level, try adding one or more of these ingredients:
- Drained kidney or black beans
- Frozen corn kernels
- Sliced green onions
- Pickled jalapeños
- Diced tomatoes (or tomatoes with green chiles)
- Chipotle chile powder
What to Serve with Chili Mac
Chili mac is a true meal in a bowl, but if you want to serve something on the side I’d go for something fresh and light like Cowboy Caviar, Sweet Corn Salsa, or even Cumin Lime Coleslaw.
Storing and Reheating Leftovers
As with any pasta dish, the macaroni will continue to get softer as it absorbs moisture from the sauce, so if softer pasta is not tolerable to you, you may not enjoy the leftovers. That being said, I will gobble up these leftovers without a second thought and love making this Chili Mac for meal prep and even to stock my freezer. I simply refrigerate single-serving portions for up to five days or freeze for up to three months. Let frozen portions thaw in the refrigerator overnight, then reheat using the microwave.
One Pot Chili Mac
Ingredients
- 1 yellow onion ($0.32)
- 2 cloves garlic ($0.16)
- 1 Tbsp olive oil ($0.16)
- 1 lb. ground beef ($5.99)
- 2 Tbsp all-purpose flour ($0.03)
- 1 Tbsp chili powder ($0.30)
- 1/2 tsp smoked paprika ($0.05)
- 1/2 tsp garlic powder ($0.05)
- 1/2 tsp dried oregano ($0.05)
- 8 oz. tomato sauce ($0.69)
- 3 cups beef broth ($0.32)
- 1/2 lb. uncooked macaroni (about 2 cups) ($0.50)
- 1 cup shredded cheddar ($1.17)
Instructions
- Dice the yellow onion and mince the garlic. Add the onion and garlic to a large deep skillet or Dutch oven with the olive oil and sauté over medium heat until the onions are soft and translucent (about 5 minutes).
- Add the ground beef to the skillet and continue to stir and cook until the beef is cooked through. If using a higher fat content ground beef, you may want to drain off the excess fat at this point.
- Add the flour, chili powder, smoked paprika, garlic powder, and oregano to the skillet with the beef and onions. Continue to cook and stir for about two minutes, allowing the flour and spices to coat the bottom of the skillet, but not burn.
- Add the tomato sauce and beef broth to the skillet and stir well to combine, making sure to scrape and dissolve any browned bits off the bottom of the skillet.
- Add the uncooked macaroni and stir to combine. Place a lid on the skillet and turn the heat up to medium-high. Allow the broth to come up to a full boil. Once boiling, give the pasta a quick stir to loosen any that is stuck to the bottom, turn the heat down to medium-low, and place the lid back on top.
- Allow the macaroni to simmer, stirring every few minutes and always replacing the lid, until the macaroni is tender and the broth has reduced to a rich red gravy (about 10 minutes).
- Stir half of the shredded cheese into the sauce until melted, and sprinkle the remainder on top. Place a lid on the pot, turn the heat off, and allow the residual heat to melt the cheese on top. Serve hot and enjoy!

How to Make Chili Mac – Step by Step Photos
Dice one yellow onion and mince two cloves of garlic. Add the onion and garlic to a large deep skillet or Dutch oven with 1 tablespoon of olive oil and sauté over medium heat until the onions are soft and translucent (about 5 minutes).
Add one pound of ground beef to the skillet and continue to stir and cook until the beef is fully browned. If you’re using a higher fat content beef, drain the excess fat out of the pan. Next, add 2 tablespoons of flour, 1 tablespoon of chili powder, ½ teaspoon of smoked paprika, ½ teaspoon of garlic powder, and ½ teaspoon of dried oregano.
Continue to stir and cook the flour and spices into the beef for about two minutes, allowing it to coat the bottom of the skillet, but not burn.
Add one 8oz. can of tomato sauce and three cups of beef broth to the skillet. Stir well until everything is evenly combined, making sure to scrape and dissolve all of the browned bits off the bottom of the skillet.
Add ½ pound (about 2 cups) of uncooked macaroni to the skillet and stir to combine. Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come up to a boil. Once boiling, give everything a quick stir to loosen any macaroni from the bottom of the skillet, turn the heat down to medium-low, and place the lid back on top.
Let the macaroni simmer in the broth, stirring every few minutes or so and always placing the lid back on top, until the macaroni is tender and the broth has reduced to a saucy red gravy (about 10 minutes).
Add ½ cup of shredded cheddar cheese to the chili mac and stir it into the sauce until melted.
Sprinkle the remaining ½ cup of shredded cheese on top. Place a lid on the skillet and turn the heat off. Let the residual heat melt the cheese, then serve. You can garnish with chopped cilantro or sliced green onions, if desired.

Yum! I really enjoyed this. It was easy and flavorful. I used impossible beef and added salt and pepper. I don’t know if my broth was reduced salt but it definitely needed some added. I topped it with sour cream because I’m about that sour cream life.

I always try to make recipes so that we can have leftovers for another night. This was pretty good on the first night but the very next night that we ate it it was very dry. Any recommendations? I saw something in the comments about how the old recipe used 1 extra cup of broth, should I try that?
You could definitely try adding that extra cup of broth if you’re planning on keeping leftovers! You could also just add a splash when you’re reheating as well.
I cut the recipe in half because we are a family of 3. I ended up adding a little extra broth because the pasta needed it to cook.
The end result was a little on the bland side but chopped parsley and some green onion helped a lot. Next time I’d use tomato paste for more flavor and a little extra chili powder.

Awesome recipe! I had to make minor modifications based on what I had, subbing tomato paste for tomato sauce and chicken broth for beef broth and it still came out delicious. Added in some black beans as suggested plus topped with avocado slices.
3 cups of beef broth made this recipe too salty. Otherwise it tasted good.
I like to do something halfway between this and the vegetarian chili mac – half meat/ half beans plus tomatoes and whatever veggies are on hand. Always comes out great!

I made this according to the recipe, with the one exception of adding a little American cheese with the cheddar, and it was nice. It was wetter than similar dishes I’ve made, but it was saucy, not brothy. Very pleasant. Next time I’ll personalize it a bit with green bell and cumin, and maybe some other things, but this is a great recipe.
Followed recipe as is and added corn, kidney beans, and a teensy bit of Dijon (no idea why I felt the need but so glad I added it!) and this is soo delicious. I made this today with hardly any variations. Used tri-color penne because that is what we had. I added a half bag of frozen mixed veg to try and veg-up my fam. Added a bit more of all of the spices to compensate. A splash of siracha because we had it, and less cheese than called for. It turned out delicious and I was happy to not have used a box mix! Thank you Budget Bytes. My son asked me to make it again. Score!

Totally understandable that they’d want to double check that they’re going to get the same results. The only difference is that this new recipe uses 1/2 tsp garlic powder and the old one doesn’t, and it uses 1 extra cup of beef broth to make it a little saucier than the old recipe. That’s it! Just a slight improvement, mostly the update was to take new photos and update the blog post with more information.
I’ve been using this recipe for 12 years and it was suddenly very brothy — like soup. An extra cup of broth is a very big difference. I wish Budget Bytes would have warned us of this change.

hmmm… So, the tomato flavor component of this one is pretty huge, so obviously it would taste totally different, BUT you could try it as more of a creamy stroganoff kind of flavor instead. Omit the tomato sauce and add in about a 2/3 cup more beef broth, 1 Tbsp Worcestershire sauce, 1/2 tsp Dijon mustard, and 1/3 cup sour cream. Sounds great to me, if you try it and it works let us know and maybe it’ll deserve its own blog post! 😂

I have had my eye on this recipe for a long time and finally made this tonight for dinner. It was delicious!! We used cavatappi pasta and meatless “beef” and it turned out great. We also added a bell pepper because it needed to be used up and it was nice addition but would be a really amazing dish as is! Definitely making this again.

Okay I read the whole recipe, even the step by step part and I see no mention of an original recipe that I keep seeing people asking for in the comments. What is this original recipe and how does it differ from this current one? I did just make this one tonight and it was so good! I measured the spices with my heart, because I always use more than recipes call for. Even my super picky 11 yr old kiddo, who is by the way obsessed with the chili mac by hamburger helper, even really liked this! Made this last night, but instead of tomato sauce I used a bottle of barbecue sauce which I had found in my pantry, slightly over BBE date – it was delicious!
It was yummy but definitely needed a good bit of salt. I think it was more than using another brand of broth could make up for. Very bland without it.

This recipe was okay, but it was just missing something. I tried doctoring it with various spices, and it helped, but the recipe “as-is” is very bland.
The new, updated version tastes so good, like Amy’s chili Mac, which is my absolute favorite. Next time I’ll add more broth/water because I wish it was just a bit more saucy. But I’m definitely making again! My boyfriend doesn’t like pasta but really liked this! Winner!
I was excited about this based off reviews but it turned out to be just ‘meh’ to me. I didn’t think there was much flavor. We ended up doctoring it up after the fact and it made a HUGE difference. Adding salt for one, as well as a small dollop of sour cream, some cholula for heat, and some green onions on top.

When you say that Chili Mac is different from American Goulash, you might be describing differences that don’t exist everywhere. When I was in elementary school, the cafeteria Chili Mac was pretty much identical to my mom’s Slumgullion and my aunt’s Goulash. None of them contained chili powder–or the other common and ubiquitous spices included here–which might be the difference between chili mac and American goulash you perceive (Goulash in Vienna was a huge and delicious surprise to me when I visited in the 1980s). Recipes change over time, and names of things do too. The actual proportions of ingredients when I was growing up often varied due to availability, so this was a recipe born to be flexible. It’s a delicious quick, filling, and economical dish and the proportion of meat can change to meet budget demands. It’s always been a kid pleaser.
Having picked up a couple of pounds of ground chuck yesterday I did make this recipe for lunch, but slightly reduced the liquid and skipped the flour. It was definitely tasty, and a bit of a blast from the past for both DH and me.
This is fantastic! I don’t even like Hamburger Helper. But this is truly a great chili mac. So easy to make, and I honestly wasn’t sure it would be good. Well… it’s worth all the 5 star ratings! My family and I loved it! My husband even had two bowls in a row. Superb flavor. Creamy texture from cooking the pasta in the chili. I skipped the flour and made it with Tinkyada brown rice pasta (1:1 sub) and it still turned out terrific. I could see making this ultra luxe for a potluck by adding some Velveeta to it once pasta has cooked. But you certainly don’t need to. Next time I might add grated zucchini and extra ground beef to boost fiber and protein. But otherwise, you cannot go wrong with this!!
Just did this with Great Value Gluten-Free Flour/pasta along with an extra 1T of cornstarch in slurry, mixed into my beef broth, (LOTS of) mustard, etc. A touch of tomato paste is nice too, along with extra salt/pepper. Will definitely be keeping this in my back pocket, I happily doubled this for easy leftovers and froze a few servings since the noodles were nicely al dente. What a delicious meal!
Much better than hamburger helper! I chopped up a head of cauliflower and tossed that in with the pasta to make this a bigger recipe since I wasn’t planning on any sides for dinner.
Made this tonight and it was delicious!! Everyone loved it … my 16 year old son and my husband thought it was great! I added extra minced garlic and 2 TBLS of chili powder/extra smoked paprika.
Another stellar recipe from Budget Bytes! We’re vegetarian so I used meatless crumbles instead of beef. If you do this, just a heads up: “meatless” meat absorbs a lot of liquid, so you’ll need to use about an extra cup of water to ensure your noodles soften up.
This has been a family staple for years. When I’m feeling fancy I’ll add a can or two of beans and even some diced frozen veggies. Perfect comfort food!

Wonderful and very flavorful!!! I did make a few tweaks, I added 1/2 tsp of Cumin and added some heavy cream in with the broth when cooking the noodles. I also subbed the tomato sauce with Hunts Seasoned Diced Tomatoes in Sauce for mild chili. We of course added more cheese than what was called for but everyone in the house finished every bite!

I had an eye on this pasta since years ago but got around to making it just yesterday. Reporting:
-I used gluten free pasta because of a coeliac guest and it worked fine with no modifications.
-I have to follow a no onion no garlic diet now so I had to replace them. I did these changes: instead of all ground beef, I replaced 80 gr of beef with pancetta cubes, the ones used for pasta. Instead of onion and garlic I sauteed in oil 1/4 tsp asafetida, 2 anchovy fillets, a jalapeno, 1 bay leaf and later all the spices. I also used a homemade chili powder with no onion or garlic. I used a bit of gluten free beer to deglaze and later a no onion no garlic beef broth made from beef concentrate. When the pasta was done I brightened it with some lemon juice (lime would have been even better), pickle juice (no onion no garlic) and fish sauce to taste.
-I had to use asiago because finding cheddar in italy is a challenge. Asiago was ok but cheddar would be ideal here.
Overall we all liked the pasta and I’d do it again if I could find some cheddar.
Also I forgot to say, this pasta really serves 3 people if used as a rich single dish (like I did), if I double everything and use a larger pot to feed more guests does the cooking time stay the same? I guess so but I’d like to have some confirmation 😅

Fantastic recipe! This one of my go-to meals. Sometimes when I’m not feeling great mentally I’ll simplify this even further with a couple of spoons of jarred garlic and half a package of frozen onions.

I needed to feed my family of six (4 huuuungry boys!) so I doubled the spices and added cumin, doubled the flour, doubled the macaroni and broth and then instead of tomato sauce I used a big can of four cheese pasta sauce. It was pronounced Ah May Zing! so thanks kindly for this recipe :)
I am making this right now and I tasted it while it’s cooking. It is sooooo good. I added a heaping teaspoon of sugar cuz well, we like a little sweetness in our lives. I also didn’t have tomato sauce but I used a 28oz can of crushed tomatoes. I made it with ground beef and ground turkey and seasoned it well. Ground turkey is gross if it’s not seasoned well so I did that first. I have a ton of mushrooms and my kids hate mushrooms but I cut them up so small and I added them to it. You can’t even notice. Haha. It is soooooo good. I love this recipe. The smoked paprika is what makes it what it is. Sooooo good.

I have a question about this recipe. I want to make it ahead (say, about 24 hours in advance). Should I just undercook the noodles a bit and then allow them to come to al dente when I’m reheating? Should I adjust the liquid measurements at all? Any thoughts or suggestions?

The noodles in this recipe are a bit hearty and it’s not so liquid that the noodles will get soggy as if it were in a soup. You should be just fine!
If you go in expecting it to taste like Hamburger Helper, you’re going to be disappointed on the first bite, but *in love* by the second or third! To me, this recipe has more of a “dark” spice palate and leans closer to the chili than the mac and cheese side of the balance … but it is really *addictively* good!!! Definitely a grown-up version to serve as comfort food for your new squeeze or yourself after the day from hell that wouldn’t end. Five stars!!

On the other hand, my wife loves it because we have control of salt etc.
If you want to add one thing… think of cumin…. that may move it toward the original… but a little goes a long way! Doug

Loved this recipe! I make it regularly and I love putting my own twist to it. Don’t have beef? Ground turkey, sausage, or chicken breast works too. Don’t have paprika? Sub in some cumin! My favourite thing to do is to add mushroom and spinach to it.
The fact that everything cooks in one pot is a glorious bonus. Highly recommended!

Super easy and foolproof recipe, still worked after butchering unit conversions (I ended up using almost 400ml = ca. 17 oz of tomato sauce instead of 4 oz, but it still ended up tasting great). Thanks so much! Since discovering this recipe I now fix it at least twice a month. For a change-up, I sometimes use an equal amount of ground Italian sausage, skip the chili powder, and use shredded mozzarella instead of cheddar.

This was outstanding. I don’t know if my portions were too large, but I don’t think this will cover 6 servings, but I couldn’t help myself, it was so good, so comforting, I was out of control. I used beef broth from a carton. It was a $1.99 for 4 cups worth of broth, instead of bouillon cubes due to all the preservatives in them. Can’t wait to try your next BUDGET BYTE$. It’s either going to be Homemade Broccoli Shells n’ Cheese or Creamy Tomato and Spinach Pasta.
My family loves this recipe the only thing I add is a can of chili beans liquid and all. This requires it to simmer a little more and gives more time for the noodles to cook!

I made this today. Super yum! I used chicken broth because I had it on hand and I used a box of kraft mac and cheese which I made before and added to the pot when I was done. I did add more cheese in the mix. We love cheese super good will make again

another win for budget bytes (and me)! super easy and foolproof. my husband is gluten free, so i made the following changes:
i used trader joe’s brown rice penne for the pasta. i added approx another 1/2 cup water and had to cook it 5 min longer. i’m not sure if this is because i’m at a higher altitude or the gluten free pasta. i also used bob’s red mill gluten free flour. i have the veggie version of “better than boullion” and it is not gluten free! it has soy sauce in it, so i used trader joe’s veggie broth — it is gluten free. i also just threw the onion garlic and ground beef all in at the same time and didn’t drain the ground beef and it still worked great!

I really wanted some Hamburger Helper Chili Mac, but alas, it’s seemingly unavailable. Made this and it turned out really well. I like a little more flavor so I added a teaspoon of salt, quite a bit more chili powder, and about a quarter of a sliced red bell pepper. It’s nothing fancy but if you want Hamburger helper chili mac this will give you pretty much what you want. (Though I really don’t think you can call it, “grown up” hamburger helper).
Loved it! I made it gluten free by replacing the flour with corn starch and I used brown rice noodles. I also used ground turkey and chicken broth because that is what I had on hand. Tastes great and is just what I expected. Thank you!

Made this recipe with ground chicken and vegetarian better than bouillon. It cooked up so fast. In my opinion, it needed more tomato and spice. I was thinking this would be more like chili and not hamburger helper. With some Valentina sauce, it was better.

This is absolutely delicious! Few days post op and I was hungry but needed something easy to make. This only takes minutes to prepare and really does taste like good old fashioned Hamburger Helper, but fresher. I used 1 15oz can of tomato sauce because I don’t like wasting food. I also had 3 large tomatoes on the verge of going bad, so I diced them up and added them. I only had the large elbow macaroni on hand, so used that. I had to add 1 cup of water to make it more “saucy” in order for the macaroni to cook, and doubled the spices because of the add in’s. This recipe is a keeper for sure! Very delicious and not spicy at all. I was amazed that it tasted just like Hamburger Helper…. But better. Thanks!

So, when I came across this I felt I needed to give it a try. I was not disappointed!

I’d like to point out having made this several times that it’s a great recipe to use whole wheat pasta, y’know, to “health” it up a bit. I’m not a huge fan of ww pasta, but the cheesy tomato sauce, (we like it loose), is so good, it’s one of the few recipes that hides the unfortunate texture that bugs me about ww. *tips for ww pasta-haters!* Cheers.
I made this tonight. I cheated and used a packet of chili seasoning, but otherwise followed the recipe exactly. I doubled the batch, and used large elbow macaroni. For some reason, after 15 minutes, the macaroni wasn’t quite cooked, so I cooked about 5 minutes longer. Now, it’s SO thick. I tried adding more water, but it still has a really thick starchy taste. Can you think of what I may have done wrong? The flavor is great, but just can’t get over the starchy-ness. Maybe omit the flour next time?
Yummy! I made a double batch with one pound of hamburger and one pound of Italian sausage. I also added a diced green pepper and a can of diced tomatoes with green chilies. I also used rotini pasta instead of macaroni. We LOVED it. So delicious. Thanks for the recipe!

Oh my, I haven’t make this recipe in a while, today I didn’t have beef broth, so I used plain water, it still came out delicious and it is so fast to make. My 2yo left his plate empty, that alone its a win win for me.

I really want to make thia but I am having trouble understanding the measurements. Isn’t 1 (US) cup = 8oz and 2 (US) cups = 16oz = 1 pound?
1 cup is equal to 8 FLUID ounces. It gets confusing because we also have WEIGHT ounces. Liquids are measured in fluid ounces, where as solids like cheese are measured in weight ounces. :/ In the US, shredded cheese is most often sold in 8oz. bags, which indicate 2 cups on the front of the package, so I try to put both measurements. Sorry for the confusion! :)
I love this recipe. I’ve made it a few times as per the instructions and it’s always quick and delicious comfort food. Most recently I made it with a few substitutions, I used beef sausage which I diced into small bits using the food processor and smoked gouda. It was amazing, I love how Beth’s recipes have a lot of versatility to them.

I made this tonight using ground chicken instead of ground beef. I also added a chopped green pepper. It was so so good. First time in a long while the kids didn’t whine about eating dinner!The whole family loved it.
Made this with veg stock and Beyond Meat beefy crumbles. Next time, I will brown the crumbles, take them out, and add back at the end (I think they broke down too much in the cooking). Also, the bag of shredded cheese I got was 1.5 cups, so I just added the whole thing – but I would not recommend this! It was almost too dense! Lastly, I added a can of green chilies, because Beth got me hooked on them and I add them to everything I can! So easy to make! Me and the Old Man inhaled it! Will definitely make again!
Okay, scratch my complaints above. Just reheated the leftovers and I only needed to loosen it with some water. I’m wolfing it down while planning when to make it again!
I stumbled upon your site yesterday while looking for an easy beef and macaroni recipe and voila! I’m always tempted to add more spices/ingredients that will give the dish more of a pop (given my Caribbean Latina roots) but I refrained this time. I’m thrilled that I did. This is EXCELLENT!!!! This was delish! Definitely a good Hamburger Helper knockoff. I could only find smoked hot paprika which my toddler wasn’t into, next time I will try to find a sweet paprika. Also next time I would make a double batch just so I wouldn’t have half of a can of tomato sauce hanging out in my fridge.
This is a go-to recipe in our house. Probably eat it every other week, if not once a week. I doubled the recipe because looking at it didn’t think it would stretch for leftovers. Uh… I had days’ worth of leftovers! There are only 2 of us in my house, so I took it to a friend’s house for dinner and they couldn’t get enough of it. This is on my list of standards, right next to the dragon noodles. YUM!!

Tonight, he wanted this anyway, so I made it with ground chicken, chicken broth, and white beans instead of pasta! (I also cut the amount of cheese in half.) Made this again, but with modifications.
I had 9 oz precooked shredded chicken, so I had to halve the recipe. However, I accidentally used the full amount of spices, which wasn’t actually a bad thing. I also added mustard powder.
I didn’t have tomato sauce, but I did have a can of Amy’s cream of tomato soup, so I used a bit more than a quarter cup and it was fine.
I wish I had used 4.5-5.0 oz pasta instead of 4.0, because it’s a bit heavy on the chicken.
And, again, I used a liberal amount of Frank’s red hot on top.
Another great recipe. I ended up having leftover taco meat and decided to incorporate this into the recipe. I used all the same ingredients and seasonings and it came out great. This is another recipe where you could incorporate different meats or add veggies.
HHelper was my sisters fave when we were kids and I never liked it. But I love your recipe, and my kids are crazy about it. I add in some veggies – carrots, peppers, and/or celery – and serve broccoli on the side. One thing I found is the beef broth flavor is a little too intense for my taste, so I add just 1 tsp beef bouillon to 2 cups of water, and it is plenty of flavoring. Love your recipes in book and blog … have the Pumpkin Molasses Bread in the oven right now and it smells amazing!!

I made this tonight and it was SO GOOD. I subbed ground turkey for ground beef, crushed tomatoes for tomato sauce, and only used half the cheese called for. Paired it with a butter leaf salad. Rad. This recipe made enough for me to freeze a couple “instant lunches” and an entire second dinner!! Beautiful!

Hmm, I think you’d have to do everything except the simmering step on the stove, so it would actually take longer with a slow cooker and be a little more complicated.

I don’t really see how this is budget friendly. Hamburger Helper is pretty cheap, not $1.30/serving. Just sayin’.
My recipes aren’t always about making the absolute cheapest option available, but finding a personal balance between cost, health, and flavor. This recipe is still a bargain when compared to eating out and definitely a step up from Hamburger Helper. :)

I feel terrible that I haven’t reviewed this before, I guess I felt I had to make it 10 or 12 times first! I love this recipe, growing up a casserole was something we only had when my Dad wasn’t at home so I love these type of dishes. I’ve been sharing your ‘one pot” recipes with some of the young mothers in my office and they love it too!
I made this last week with some leftover ground beef in the freezer. Since the only cheese I had on hand was Manchego, I used that instead of cheddar. I also substituted fresh chopped serrano chiles for the chili powder. So good!!!
Added a can of black beans. It was great! Not sure if this was already said, but use fresh grated cheese, not pre-shredded. The anti-caking agent on the pre-shredded will make it gritty.

My daughter(13 and picky) loves this. We made it for dinner on Wednesday and when grocery shopping on Friday and planning lunch on Saturday she asked if we could make it again!

We changed it to be Ovo/Lacto Vegetarian & Gluten Free. Here are our changes.
The same bullion but the vegetable version.
Instead of beef we used 1lb of cooked light red kidney beans mashed. (I use dried-Cheaper)
Add 2 tbsp of olive oil to compensate for the loss of the oil in the beef.
GF Rice Elbow Mac.
My daughter also packs as much cheese as she can into the measuring cup and I pretend not to notice :) I’m guessing 1 1/2 cups instead of one.

Just wanted to say thanks for all the great recipes, ideas and hard work. A friend left her Le Creuset (sp) stockpot here after a potluck dinner on the farm a few weeks ago. So much fun making $9 dinners in her $400 pot…don’t tell anyone :)

This is delicious!! I made it for dinner this evening, and enjoyed every bite. It makes quite a lot, so I’m planning to freeze half of the left overs. Do you think it will defrost and reheat well?

Have you ever made this with vegetable broth and turkey meet instead of beef broth? I haven’t eaten beef in years, ages really and would like feedback about substituting the vegetable broth for beef. My husband and kids ate this last week but followed the recipe verbatim and it was a SUPER HIT!!! I wanted to try some but had the beef issue…any suggestions?
I think your ideas would work great! Or you could use chicken broth instead of vegetable broth, too. I find that chicken broth usually has a little more depth and isn’t quite as oniony as vegetable broth.
Made this last night with ground turkey and added thick sliced mushrooms. Man was this delicious! Extremely filling and boyfriend approved! This will be a great easy go to meal in the winter!
This has become one of my go-to meals. I use cayenne to make it a bit spicier but only use about 1/2-3/4 tablespoons. Yum!
Laura – It sounds like you may have used cayenne pepper instead of chili powder? Chili powder is a dark red seasoning blend, which consists of mild red pepper, cumin, and a few other spices. :(

Anon – Smoked paprika does taste quite a bit different than regular paprika, but this recipe would probably still be fantastic even with out it, so don’t fret if you don’t have it. :)

My husband loves hamburger helper since he ate it so much as a kid, it’s very nostalgic for him. I think it’s pretty gross, but one night I caved and made a box for dinner… my first and last experience with the stuff, that’s for sure. It was dis-gus-ting and I literally could not finish more than two bites. But this is absolutely delicious. I made it for dinner tonight — it thrilled hubby’s inner child while satisfying my more adult palette. Thank you so much!
I will note that I used traditional elbow macaroni and it did require more water and about six extra minutes of simmering time to cook the pasta fully.

This is the first recipe of yours that I’ve tried and it was AMAZING. My boyfriend is vegetarian so we figured we’d split the ingredients (half beef, half meatless crumbles). Yeah right. We ended up making a whole pot of ingredients for each of us – which means more awesome leftovers! Yessss!

Perfect meal for a cold snowy night. My thirteen year old son would have eaten the whole pot if I hadn’t made him share! We did add a whole bunch of sriracha because we put that $/&@ on everything!
This has great flavor. I may try adding green bell pepper to the onion and garlic. I am a cheese lover so I topped it with a little more sharp cheddar. I can’t wait to try more of your recipes. I love it that you have simple (not too many ingredients), tasty, and healthy meals. Great Job!
This was my first meal from your site. It was a quick, easy, not to mention kid friendly meal! My kids loved it and my 3 yo said it was delicious. I used ditalini since that is what I had on hand. Can’t wait to try more meals.
Made this last night as a “grown up” mac and cheese/hamburger helper. My boyfriend LOVES mac and cheese, but we do not love the sodium levels and such from the boxed kind. He absolutely LOVED this. It turned out perfect and delicious! I used dairy-free substitute cheese and it was amazing!

Made this tonight and used ground turkey instead of beef since that’s what I had on hand, and added in a little can of hatch green chilies…SO GOOD. It was a cold rainy day today, perfect weather for this kind of food!

Made it last night, and I can honestly say… it was amazing! Thanks! You can cut half the cheese and it will still taste amazing. I used the same amount of beef, but doubled the amount of tomatoe sauce, broth, garlic, and macaroni.

Miranda – Mine wasn’t spicy at all. Most of the time the “chili powder” that you buy at the grocery store is a mix of mild chilis, cumin, and a couple other mild spices. It usually just has a nice smoky/earthy flavor. If you’re unsure, try tasting a pinch of your chili powder just to make sure that it’s not spicy. Mine really did taste just like hamburger helper (except more fresh)! :)
Is this spicy by any chance? Have 3 young kids who do not like spicy (although me and hubby do)
You know, I think it might freeze okay… I mean, lean cuisine and other frozen dinners contain similar dishes and they reheat from frozen okay. Testing it out sounds like an excellent excuse for me to make some more ;D If I do, I’ll be sure to post my results for you.

I made this tonight and it was very tasty. I used home canned tomato sauce and home-made stock. Because neither of those had particularly much salt in them I ended up adding salt at the end.

My 13 month old daughter has been tearing UP the leftovers since I made this. Already plotting how to sneak some more vegetable purees into the sauce next time. What she doesn’t know, haha.

I have never had Hamburger Helper. Growning up in the 70’s and early 80’s, I think that might be some sort of miracle. Having always been interested, but never willing to buy a box in fear that it might taint my reputation as a foodie and a good cook, this definately caught my eye. Not only was this so good on a cold and rainy day in late May (so comforting), it was VERY easy. So easy, in fact, that I am not sure why you’d buy a box in the first place!

ahhh..the Hamburger Helper memories. My older sister got married very young and didn’t know how to make anything back in the 70’s. She used to make Hamburger Helper without the hamburger. LOL

Anon – Hamburger helper is kind of an instant box meal that you add to ground beef. It’s very popular in the U.S.

It’s the way my mom made it in the years before Hamburger Helper, but she never kicked up the spices. It was also a school cafeteria regular in the 50s, one of the way they used the cheese that came from the government commodities program.
WOW so good. It took me 2 seconds to make and was sooo much better than the hamburger helper you get in the packet! I also made your focaccia rolls, as well as the zucchini salad to make the meal a little lighter. All were so delicious and the bread was great to eat with the pasta. YUMMM love your website and all the work you put in it!! Keep it up you’re seriously amazing!

Deb – I’m not sure if adding broccoli would interfere with the texture of the chili cheese sauce as it cooks. I just have a feeling that it would taste better on the side so that you have some variation in flavor. The freshness of the broccoli flavor is a nice contrast to the heavier flavor of the chili cheese. If the broccoli is added in, you wouldn’t get that contrast.
Can you put the broccoli in when you add the onion/garlic to truly make it a one-pot meal? Or would you end up cooking out the nutrients? What about when there’s 4-5 minutes to go on the pasta cooking?
I make this all the time- my 8 year old loves it! The only difference is the spices- I use 1 tb chili powder, 1 tb brown sugar, and 1 tb cumin. It’s also good w/ ground turkey thigh instead of beef!

This is indeed the food of my childhood! We didn’t ever have Hamburger Helper, but we did have something called macaroni casserole: cooked macaroni with ground beef and marinara, mixed together with mozzarella and baked until gooey on the inside and bubbling to a crisp on the top. I don’t eat much meat now, but I may have to make an exception for a batch of this…
