I don’t know if there’s any salad that says “Summer” more than a simple creamy cucumber salad. This salad is so light and fresh, and it only takes minutes to make, so it’s the perfect side dish for all of your summer meals.

What’s in Creamy Cucumber Salad?

This classic summer salad is made with cucumbers, onions, and a simple creamy dressing. The dressing can vary from recipe to recipe, but here are the ingredients for our cucumber salad:

  • Cucumber: The base for this salad, cucumbers add a deliciously fresh flavor and a nice crunch. You can use conventional or English cucumbers for this recipe but I suggest scraping out the seeds if using conventional cucumbers.
  • Sour Cream: This is the base for the creamy dressing. You can sub yogurt for the sour cream or even add a little mayonnaise to make it extra rich and creamy.
  • Lemon Juice: Lemon juice provides a nice acidic balance to the richness of the sour cream, so the flavors stay light and fresh.
  • Sugar: Sugar helps create flavor balance against the rich sour cream and acidic lemon juice. Some people prefer to leave out the sugar, which is an option if you prefer.
  • Dill: Dill and cucumbers are the perfect flavor pair! You can use fresh or dry dill.

Can I Use Fresh Dill?

Creamy Cucumber Salad is often made with fresh dill, but since fresh dill can sometimes be hard to find or more expensive, I made the version below with dried dill. You can certainly use fresh dill if you have access to it. I’d use about 2 Tbsp chopped fresh dill in place of the dried dill listed below.

To Peel or Not to Peel the Cucumbers

It’s totally up to you whether or not you want to peel the cucumbers. I love the contrast of color the peel provides, but some people experience digestive upset with cucumber peels, so peel them if you prefer. You can also scrape out the seeds if those bother you as well.

What Else Can I Add?

This super simple creamy cucumber salad is really flexible and many people make their own unique versions. If you want to branch out from the basic version, here are a few other ingredients you can try:

  • Greek yogurt in place of the sour cream
  • Mayonnaise (2-4 Tbsp) to make the dressing extra rich
  • White vinegar in place of the lemon juice (this gives the salad a tangier flavor)
  • Radishes, sliced, for extra crunch and color
  • White onion in place of the red onion
  • Grape tomatoes, halved

How Are the Leftovers?

This salad is best when freshly made because the salt in the dressing will draw the moisture out of the cucumbers and cause the salad to get watery if refrigerated for a day or more. Luckily, this salad is really easy to scale down, or, if you know you plan to eat the leftovers for a few days, you can salt the cucumbers ahead of time to draw out the excess water. But salting the cucumbers will make them softer, which is why it’s not my personally preferred method.

To pre-salt the cucumbers, place the sliced cucumbers in a large colander and toss with ½ tsp salt. Let the cucumbers drain for about ½ hour, then pat dry with a paper towel. Since the cucumbers will already have some salt on them, skip adding salt to the sour cream dressing and just add salt to taste once the salad is assembled.

Ingredients

  • 1/2 cup sour cream ($0.55)
  • 2 Tbsp lemon juice ($0.08)
  • 1/2 tsp dried dill ($0.05)
  • 1 tsp sugar ($0.02)
  • 1/2 tsp salt ($0.02)
  • 1 large cucumber ($1.49)
  • 1/4 red onion ($0.10)

Instructions 

  • To make the dressing, combine the sour cream, lemon juice, sugar, dill, and salt in a bowl. Set the dressing aside.
  • Peel the cucumbers, if desired. Slice the cucumbers and thinly slice the red onions.
  • Combine the cucumber, red onion, and dressing in a large bowl and stir to combine.
  • Let the salad sit for 5-10 minutes, give it another stir, then serve.

How to Make Creamy Cucumber Salad – Step by Step Photos

Make the dressing first. Stir together ½ cup sour cream, ½ tsp dried dill, 2 Tbsp lemon juice, 1 tsp sugar, and ½ tsp salt.

Peel the cucumbers, if desired. Slice one large cucumber and thinly slice ¼ of a red onion.

Combine cucumber, onion, and dressing.

Add the cucumber, onion, and dressing to a large bowl.

Stir to combine. I like to let the salad sit for about 5-10 minutes before serving just to let the flavors combine a bit. Give it a good stir again before serving.

  1. Love this recipe and I buy a cucumber every shopping trip to make it for my husband. Thanks for a great tasting simple recipe!

  2. Great recipe, but next time will only add a pinch of salt, if any, to the dressing! I used kosher salt to pull some moisture out of the cucumbers and drained before I assembled. Was super creamy, but turned watery after leaving in the fridge for a couple of hours. Still was delicious though.

  3. Can you use yogurt instead of sour cream? If so, what type of yogurt would you recommend.

  4. Loved it. Served it with lamb burgers tonight. Once thing I might do different next time is to put the cucumbers and onions in a colander, salt them and allow them so sweat off some water. Then assemble a few hours ahead of time, allowing the dill to reconstitute. Not sure it will make a difference as it was fantastic as written.

  7. A trick I learned from my in-laws , is to let the cucumbers sit and drain the liquid before adding the sour cream mixture , makes it soooo much creamier!

    2. I cut my cucumbers thinker so they keep their crisp to them. I saw about 5-6days if you cut them thick. If you slice them thin 3. The longer they sit the sour cream will become more liquidity. I personally like it that way but it’s a preference.

  9. I’m not vegan so bacon is my addition and I substitute the sugar with raw honey I also pick thr cucumbers at about 3″ keeping the seeds almost invisible…great page

    1. I wouldn’t do an even swap, but you can definitely add a couple tbsp of mayo to make it a bit more rich!

  14. I’m amazed how good this salad is.I used the sub Greek yogurt and it complimented my trip tip. I cut it into spears and plated it in a stack.My family said it was one of the best dinners I’ve made. They don’t even care for cucumbers but ate it all

  16. Good recipe but definitely should de-water the cukes before making the salad. Used Greek yogurt instead of sour cream. Also added 1/4 tsp fine ground white pepper which kicked it up to a whole other level.

    1. Hmm, I’m not sure about that! It could have something to do with the texture of the particular brand of sour cream used (does it have stabilizer ingredients in it?) or maybe it was stirred too much and some air got trapped?

  24. Great recipe. I always find that sour cream recipes for cucumbers are missing a little something. I always add a couple dollops of mayonnaise into it. Gives it that little something.

  25. This is the same recipe I’ve used for generations. The only difference is you’ve replaced the vinegar with lemon juice. For some reason, ordinary cukes are preferred over English cukes in this recipe in my house. Either way it’s a cool, refreshing side that takes almost no time!

  30. My mom used to make cucumbers and onions when we had roast beef dinner. It was sooo good. Her recipe was cucumbers, onions, miracle whip salad dressing, milk, salt, and pepper. It was great as a left over on a roast beef sandwich. Back when I was a kid you peeled cucumbers..( 50+ years ago )

  33. I’ve done this recipe with vinegar instead of lemon juice, Greek yogurt instead of sour cream, and ended with a drizzle of hot honey instead of sugar. Yummy!!
