This really has to be one of the fastest, easiest dinners EVER. I have been craving meatloaf lately, but decided to just go ahead and cook all my vegetable sides along with the loaves to make my whole dinner in one swoop. This Sheet Pan BBQ Meatloaf Dinner is seriously so easy and customizable, I can see myself making at least ten variations on this simple theme. Watch out, because you’ll be seeing this on the blog a lot in the near future!

How Many Does This Recipe Feed?
This recipe makes dinner for two, and if you know me and my style of eating, then you know that I like things heavy on vegetables and light on the meat. This meal is super easy to switch up if you want different portions, though. To avoid overcrowding the sheet pan, use two sheet pans to double this dinner and feed four. Or double the meat mixture and keep the vegetables the same (using one pan) to do four portions that are heavier on the meat and lighter on the vegetables. It’s up to you.
Roasting Time May Vary
One last note. Roasting time varies on many factors, including the size and shape of your food, the temperament of your oven, or even the material and color of your baking sheet. So, take my roasting time with a grain of salt.
If your vegetables are done before your meatloaves, take them out early and return the loaves to the oven until they finish. If the vegetables need more time and your meatloaves are done, plate up the meatloaf and return the vegetables to the oven. Use your senses and watch for doneness. And please use a thermometer to make sure your meatloaves are cooked to a safe temperature, 160ºF.
Sheet Pan BBQ Meatloaf Dinner
Ingredients
Vegetables
- 1 sweet potato (about 1 lb.) ($1.51)
- 12 oz. frozen broccoli florets ($1.19)
- 2 Tbsp olive oil ($0.26)
- 1/2 tsp seasoning salt* ($0.05)
- salt and pepper to taste ($0.05)
BBQ Meatloaf
- 1/2 lb. ground beef ($2.50)
- 1 large egg ($0.26)
- 2 Tbsp bread crumbs ($0.12)
- 3 Tbsp BBQ sauce, divided ($0.26)
- 1/4 tsp smoked paprika ($0.03)
- 1/8 tsp garlic powder ($0.02)
- 1/4 tsp salt ($0.02)
Instructions
- Preheat the oven to 400ºF. Peel the sweet potato and cut it into 1/2 to 3/4″ cubes. Place the sweet potatoes and frozen broccoli florets (no need to thaw) on a large baking sheet.
- Drizzle the olive oil over the sweet potatoes and broccoli florets. Sprinkle the seasoning salt over the sweet potatoes and then season the broccoli florets with a pinch of salt and pepper. Use your hands to toss the vegetables until they are coated in oil and spices, keeping the sweet potatoes on one side of the baking sheet and the broccoli on the other.
- Transfer the baking sheet to the preheated oven and roast the vegetables for 15 minutes.
- While the vegetables are roasting, prepare the meatloaves. In a medium bowl combine the ground beef, egg, bread crumbs, 1 Tbsp of the BBQ sauce, the smoked paprika, garlic powder, and salt. Work the ingredients together with your hands or a fork until they are well combined. Divide the meatloaf mixture in two and shape each half into a flattened oval.
- After the vegetables have roasted for 15 minutes, remove the baking sheet and stir each of the vegetables. Push each off to the side a bit to make room for the meatloaves. Place the shaped meatloaves in the center and then spread 1 Tbsp of BBQ sauce over each loaf.
- Return the baking sheet to the oven and roast for an additional 20 minutes, or until the internal temperature of the meatloaves has reached 160ºF. Remove the baking sheet from the oven, plate up the meatloaves and vegetables, and serve immediately.

How to Make Sheet Pan BBQ Meatloaf Dinner – Step by Step Photos
Begin by preheating the oven to 400ºF. Peel and dice one sweet potato (about 1 pound) into 1/2 to 3/4-inch cubes. Place the cubes on a baking sheet along with 12 oz. frozen broccoli florets (no need to thaw first). Drizzle a tablespoon of olive oil over each, then season the sweet potatoes with your favorite seasoning salt and the broccoli with a pinch of salt and pepper. Use your hands to toss the vegetables (keeping each on its own side) until they are coated in oil and spices. Pop the baking sheet in the oven and roast for 15 minutes.
While the vegetables are roasting, prepare the meatloaf. Combine 1/2 lb. ground beef with 1 large egg, 2 Tbsp bread crumbs, 1 Tbsp BBQ sauce, 1/4 tsp smoked paprika, 1/4 tsp salt, and 1/8 tsp garlic powder.
Mix the meatloaf ingredients together until evenly combined. Divide the mixture in half and then shape each half into a flattened oval. Just make sure they are the same thickness all the way through so they cook evenly.
After the vegetables have roasted for 15 minutes, take the baking sheet out of the oven, stir the vegetables, and push them to each side a bit to make room for the meatloaves. Place the meatloaves in the center and spread about 1 Tbsp BBQ sauce over top of each.
Now put it back into the hot oven for another 20 minutes or until the internal temp of the meatloaves reaches 160ºF. As I mentioned in the intro to this blog post, roasting time can vary depending on an almost endless number of factors, so keep an eye on the contents and use your senses to take them out early or add more time as needed.
And this is what it looks like when finished. The sweet potatoes should be soft and with some browning on the edges. The broccoli should also have some browning on the very edges.
Plate it up and enjoy!!
Wanted to love it, but didn’t. I don’t see the point of making this on one sheet. The sweet potatoes really need to cook for 45 minutes to get a nice caramelization so might as well cook them separately. I didn’t enjoy fiddling with the raw meat patties on a hot tray so they should also have their own sheet/pan. And the end product? Ground beef patties tarted up with sugary sauce? Might as well make smash burgers instead.

I made this last night and everyone loved it. Everyone went back for seconds, and there was not a bite left uneaten! Will definitely add this to the rotation.

This a regularly made recipe at our house. We use Beyond Burger instead of ground beef. If we are out of sweet potatoes, we use Yukon gold potatoes instead. It’s fast, easy, delicious, uses ingredients we always have, and is fairly inexpensive. What’s not to love.

This is delicious I made it tonight for dinner I added fresh onion (1/8 cup) and garlic (2 cloves) to the meatloaves. Very tasty and straightforward recipe. I will definitely be making this again!

Just plain breadcrumbs. You can usually find them in the baking aisle near flour and cornmeal. :)
Giving this 4 stars ONLY because for me I think the veggies don’t need that extra 20 min at the end..my broccoli would’ve been mush…and that i really think with the amount of food you cant put it all on one sheet pan if you want to give the veggies a little extra breathing room. BUT MAN, THIS IS SO GOOD!!!!!!! I had your basic meatloaf expectations going into it. But wow, the flavor of this is really quite fantastic. This was very straight forward and relatively quick recipe even for my first time making it, and the meatloaf was so moist and delicious. Definitely putting this on my rotation.
Pretty sure I’ve commented on this before, but this is such a regular recipe at our house! I really needed this when I had no idea what to cook for dinner and was totally exhausted. Now that it is in regular rotation, I sub in whatever vegetables I want for the night. It’s even written down(!!) in my personal recipe book!

Just wanted to come back and say I did just the meatloaf part in the air fryer tonight when I had something else in the oven, and it came out awesome. 375, 8 min per side. I did them without the bbq sauce on top so I could flip, added it for the last 3 min.
What a healthy and inexpensive comfort dinner! Can I substitute sliced butternut, acorn or kabucha squash for the sweet potato?
Feel free to substitute with the orange veggie of your choice! Since we haven’t tested it ourselves, I can’t be certain of which one will bake up in the correct amount of time — but one of Beth’s tips in the blog post rings true no matter what veggie you use:

Like sweet potatoes, you will know the squash pieces are done cooking when you can insert a toothpick, fork, or butter knife into each piece easily, without exerting any pressure. One other tip for squash, I like to throw these little guys into the oven whole while it’s preheating, and then remove and carefully slice in half, scoop out the seeds, and then slice…that 5-10 minutes will soften it *just enough* to make it super easy to break down. This was the first recipe I’ve made from this website. It was perfect in every way. My spouse loved it and ate the leftovers without hesitation!
This is the best meatloaf recipe, will make again. The broccoli cooks the fastest, then the meat, then the potatoes. I made three small patties, they were done at 18 min. I used a mix of ketchup, stone ground mustard and brown sugar in place of the bbq sauce, tasted great. The potatoes were a little undercooked, need to cut into very small cubes so they are done at the same time. I used fresh broccoli and will keep the pieces larger next time, they were slightly overcooked at the end. The portion was perfect for three meals.
I assume using fresh broccoli will turn out fine as well right? The recipe emphasizes frozen broccoli.

I had to take out of the oven long before recommended time. The broccoli and potatoes were starting to burn and the meatloaf was sticking to the pan. Tasted good though!
If you don’t like BBQ sauce is there any alternative you can think of? Or could it be left out? Was thinking maaaaybe oyster sauce?
Hmm, oyster sauce doesn’t sound that good to me. You could leave out the BBQ sauce and just add some more seasoning or a little ketchup to your meatloaves (ketchup will have a similar sweet-tangy effect). A lot of people put a ketchup glaze on meatloaf, so you could do that, too.

Can I use ground chicken instead of ground beef.
I haven’t tried this one with ground chicken, so I’m not sure how that would turn out. :)
I used the ground chicken and followed the recipe but cooked the chicken loaf to temperature (165F) not to time. The vegetables were done crisply and the chicken loaf was excellent!
I used ground Turkey, added mustard powder and onion powder for extra flavour. Turned out pretty well but next time I’d add even more spices to make up for the blandness of ground Turkey.
This is one of my families favorite meatloaf recipes. I want to make it for an extended family member but they have an egg allergy. Will it hold together without egg or is there a substitute I can do?
You could probably skip the egg, but then you’ll need to reduce the breadcrumbs too because there won’t be as much moisture for them to absorb. And then if you skip the egg and reduce the breadcrumbs the meatloaves will be a little less tender. I think the best option would probably be to use a store-bought egg substitute, although I haven’t tested any of those in this recipe.

Yes, I think that would probably work fine. :) You may need to add a couple extra minutes to the cook time, since they’ll be very cold when going into the oven.
This recipe is a blessing!!! Had ground beef, very little time, and no inspiration. This baby cranks out quick and hubby said it has some of the best flavor for a meatloaf that he’s ever had. AND SO EASY! Didn’t have egg (Seriously. One of those nights.) and put in a scoop of mayo instead and still held together well. Used fresh broccoli, so I put the raw brocc and meatloavies in at the same time for 20 min (and skipped sweet potato, because …. again.).
This is SUCH a delicious, easy, filling meal. My husband loves his meat so I was a bit anxious making the meatloaves “mini”, but they were perfectly sized and the sweet potatoes and broccoli were so good that we didn’t care about having any more meat. I did add a bit of Montreal Steak Seasoning to the broccoli (as suggested in another roasted broccoli recipe on here) and that turned out great. This is one of our favorite recipes!

It’s about time I comment on this recipe which has become a comfort go-to. Before this recipe, I had never been successful with meatloaf. I had tried making it traditionally (one large loaf) and each recipe failed me with undercooked middles and liquid-y insides. This mini meatloaf method is perfect, plus helps us portion. Delicious. There’s are three of us, so we doubled the recipe. I know hubby had one meatloaf patty and half of the 4th one. We gobbled down the roasted veggies because they were so good. There isn’t enough for another meal. The frozen broccoli was a good hack because you would never know we started with frozen ones. Will definitely make again.
We gave the meat loaves 20 minutes of time. They were at 157, so my daughter gave them a little more time. They were done all the way through when we ate them

I made this recipe last night much to my boyfriend’s delight! Even my mother, who typically despises anything with ground beef, was fond of this meal. I was surprised with how delicious this was, despite being really, really easy.
This was so easy and so delicious!! I love love vegetables along with sweet potato! I will definitely make this again. My brother loves meatloaf and he was so excited to eat it.. I basically made 4 servings of this recipe and he ate practically the whole sheet pan!
I would recommend that If you do have heavy eaters or prefer more meat to make more of the meatloaf, because 1 pound for the 4 servings seemed a little.

This was quick, easy, and delicious–perfect for two people. I also like that it’s heavy on the veg! I never thought to roast frozen broccoli florets, but it worked! I did add a tablespoon or so of dried onion soup mix to the ground beef for extra flavor and omitted the salt. Also lined the pan with parchment paper for easy cleanup. Next time I will put everything into the oven at the same time, since I found the veggies were done before the mini meatloaves. Looking forward to making this again.

This recipe is great for weeknights. Quick, easy and tasty. It is on our rotation a couple of times a month. Sometimes I use turkey and sometimes I add in regular potatoes. I have also made it with brussel sprouts instead of broccoli.

My boyfriend is a huge fan of this recipe and I’m always looking for more vegan options we can both enjoy. :) I was thinking a direct swap with ground beef to lentils and egg to flax, but figured it couldn’t hurt to ask for input first.
This is a simple and delicious dinner. I prize thrift, ease, and tastiness, not to mention good nutrition, and this meal meets all that criteria. Thanks Beth for another, as we say, “keeper;” it is going into the “rotation.” This meal is a good balance between protein and a lot of vegetables; it’s healthy as well as good tasting. It is wise to have a plate with a quarter protein and three quarters vegetables. I like seeing these kinds of recipes very much.
Just tried this, so good and SO easy! The flavor was simple and good, but nothing to write home about. However, the very simple prep and cleanup and variability to use what’s on hand (I had everything except bread crumbs – made my own) make this 5 stars. Was able to add carrots and double the meatloaf to make it a meal for 3 while still fitting on one pan. The timing of the broccoli sounded way too long, but it’s not! It came out perfectly. Next time I would double the salt in the meatloaf.
PS – used Jane’s Krazy Salt as the seasoning salt and it tasted great!
How would I cook raw broccoli? Would I need to steam it first then bake in the oven? Or would it cook the same?
You can steam it first, or you can just roast it longer. If you choose to roast it longer, you’ll just need to play it by ear, as it can depend a lot on the size of the florets. Make sure they’re well coated in oil, too, as it will dry out easier than frozen or steamed broccoli.
Can you replace the broccoli and sweet potatoes with brussel sprouts and frozen cauliflower? How would that affect the roasting time?
Yes, you could, but I’d need to do some testing to find out the proper cooking times. :)
This was so good! I used ground turkey and ketchup and it was great. I loved that it all cooked on one pan, so easy? What percentage of lean beef did you use/would you recommend? I think I did 85/15 ground turkey and I think there were a lot of drippings on the sheet pan. Also, how would you recommend reheating the leftovers for lunch – microwave vs. toaster over? Thanks!
I don’t remember what percentage I used for this one, but I typically buy either 85/15 or 90/10. I don’t own a toaster oven, so I don’t know how well that would do for reheating, I just used my microwave. :)
Just curious – doing Whole30, what could I use to replace the breadcrumbs?
Unfortunately I’m not familiar with the guidelines for Whole30, so I don’t have a suggestion for you, but maybe someone else who is doing Whole30 will see this and chime in with some ideas. :)
Made this recently and still can’t stop dreaming about how juicy and delectable that meatloaf was! Was a little less pleased with the sweet potatoes, but maybe they’d be better if I had tossed them with olive oil rather than drizzled.

It didn’t over cook it for me, but I think “over cooked” is highly subjective, especially when it comes to vegetables. Keep in mind that I used frozen broccoli, which is a lot more wet than raw broccoli, so it won’t dry out as quickly in the hot oven.

I live meatloaf but my boyfriend hates it. I tried this to make us both happy, and boy did it work like a CHARM! By far the best meatloaf ever! I made some minor changes based on what I had on hand: (1) mixed my own seasoning salt for the sweet potato, (2) mixed up my own ketchup-based sauce for the meatloaf, instead of using BBQ sauce and (3) used panko instead of bread crumbs. The results were absolutely scrumptious, and I loved how I could cook everything on one pan. This is one of my new favorites. Thank you!
Sooo I’ve just made this for my mother and myself and we loved it! Very simple and quick to make! Make sure to keep checking if everything is cooking evenly, i had to take the veggies out a little bit sooner.
My poor kids had never had meatloaf before, so they were confused when I announced that we were having it for dinner. They were quickly swayed, and ending up loving it.
I did not have breadcrumbs, so I subbed oats that I had ground in the blender. I doubled everything for the four of us. I loved the easy prep and cleanup.
My husband was pleasantly surprised with the roasted broccoli and the spices on the sweet potatoes. We have a variety in our meals but We’ve never roasted broccoli!
Do you think Italian breadcrumbs would be okay to use?
It may taste a little strange with BBQ flavors, but perhaps there won’t be enough to really tell.

I just made this recipe last night, followed very closely and only modification was using smashed croutons instead of breadcrumbs and increased to about 1/4 cup total, and the BBQ sauce was the TJ’s Kansas City sauce. I can’t speak to how the meat turns out but the veggies were totally delicious using this recipe and process! My BF ate the meatloaf and said it was some of the best he’s ever had and that all the flavors worked so well together, he literally called it “the perfect meal”. Will definitely make again – fast, easy, nutritious and tasty!

This turned out super yummy and was super easy. I doubled the recipe and excluded the broccoli (and substituted with a salad). I also added finely chopped onions to the meatloaf and used a homemade tangy BBQ sauce that has a strong tomato flavor to get more of the traditional taste.
Wow, this was delicious and easy. I found ground sirloin on sale, so used that and Stubb’s siracha bbq marinade. We don’t care for sweet potatoes, so I subbed Russet potatoes, with Tony Cachere’s seasoning. I doubled the recipe so we could have two dinners. So glad I did, what a great meal!
Does the paprika make it spicy? Want to make this for my toddler.
No, my smoked paprika is mild, not hot. There probably are some hot smoked paprikas out there, but all the brands I’ve used so far have been mild.
This was *amazing*. I somehow forgot that dinner doesn’t need to take three hours, fifteen thousand ingredients, and a complicated sauce in order to be absolutely fantastic.
I am decidedly not a meatloaf person (and neither is my boyfriend). While it was cooking, we both reminisced about the crumbly, chewy, overwhelming beef smothered in ketchup that our parents made when we were kids. It only took one bite of this for us both to be converted. If you want to make this recipe, but are hesitant because you hate meatloaf–just try it.

Also—I added trader joe’s South African smoke seasoning to the sweet potatoes. The bacony flavor went really well with the bbq sauce flavor. Try it :)

Hubby and I made this for dinner tonight and decided after the first bite that it’s a keeper! Great idea to make the mini meatloaves, which cut down the fat and allowed them to cook in 20 minutes instead of an hour.
This is a perfect comfort meal for two!
I really don’t like sweet potatoes. If I use regular russet potatoes – probably a couple of them depending on size – would I need to adjust cooking times?
It should be about the same. It also depends on the size of the pieces, so you really have to play it by ear.
Meatloaf just isn’t the same for me without ketchup in the sauce. Do you have any suggestions on incorporating ketchup without messing up the ratio of everything else? I love your sheet pan meals!
I made this but used the ketchup/mustard/brown sugar glaze that I normally put on meatloaf instead of the BBQ sauce and swapped out the smoked paprika for regular paprika and it turned out wonderfully!
I never liked meat loaf as a kid, but this looked so easy I decided to give it a try. It was excellent! Definitely adding it to our rotation.
I did put only the meat back in the oven for 5 minutes since it wasn’t quite hot enough after the first 20 minutes.
I used Stubbs Sweet Heart bbq sauce, which came out great.
This one-pan method was so quick, convenient, easy, and delicious! I used some chunked butternut squash in place of sweet potato since that’s what I had on hand. The timing was just perfect as written.
I made an double-batch and prepped meals for my husband and me for the rest of the week and then some, in well under an hour, using only two half-sheet pans (I toss the veggies with seasoning and olive oil on the pan) and one bowl for mixing the ingredients — can’t beat that!
I have a bit of chorizo and sausage left from another recipe, and I think these mini loaves are the perfect way to use up the odd small leftover amounts going forward. Thanks for another great recipe, Beth!
I always love some pork in my meat loaf mixture, and the chorizo sounds terrific, too. Did the broccoli come out sweet? I have hesitated to roast it due to the fact that when overcooked it gets bitter.
The broccoli turned out delicious, and not bitter at all! I used fresh this time because I had it on hand, but I usually use frozen broccoli for roasting and get the same great results. I seasoned with salt and fresh cracked lemon pepper, and just kept an eye on things as everything roasted, stirring once and eyeballing the color and texture before adding the meatloaf.
I like pork in my meatloaf as well! I’m sure I’ll have fun experimenting with these mini versions!
What can you use instead of bread crumbs to make it gluten free?
Oats that have been blended into a more fine texture works (just make sure they’re marked gluten-free because some oats aren’t), or sometimes you can find gluten free bread crumbs at the store. :)
Or some folks are so sensitive that oats are too close genetically to wheat for them to tolerate. Maybe use some cooked rice?

I would actually say it may take more time for fresh broccoli. Frozen broccoli is blanched before being frozen, so it’s actually partially cooked already. It will definitely depend on the size of your florets, though.
Seems like it would be unsafe to put raw ground beef on the same pan as veggies. Am just being paranoid?
No, because the meat and the veggies are being heated at the same time to the temperature where bacteria will be destroyed.
As long as it’s being cooked to 160ºF, it is safe. What you wouldn’t want to do is let raw ground beef touch vegetables that aren’t going to be cooked (like a salad, or tomato slices that are going on a burger, etc).
