I used to be a “seasoning packet” junkie. Store-bought packets of taco seasoning seemed so easy. But really, if you have a decently stocked spice cabinet, making your own homemade taco seasoning takes just a few minutes and costs less. I’ve experimented with different combinations of spices for taco seasoning over the years and I think I’ve found the winner! One batch of this super tasty homemade taco seasoning is roughly equal to one store-bought packet and it’s 10 times more flavorful. You can even mix up big batches of it and store it pre-mixed in an air-tight container for quick use later!

Why make homemade taco seasoning?

While it’s easy to just buy a pre-made mix, you can control the ingredients, freshness, and flavor of your homemade taco seasoning. So if you like your tacos extra smoky, go ahead and add more smoked paprika! Need low sodium? Mix up your own taco seasoning and use less salt. You have all the control when you make your own!

What’s in Taco Seasoning?

This homemade taco seasoning recipe has just seven simple ingredients that you probably have in your pantry right now! Taco seasoning is made with:

  • Chili powder
  • Smoked paprika
  • Ground cumin
  • Cayenne pepper
  • Oregano
  • Salt
  • Pepper

Taco Seasoning Variations

Here are a few substitutions and add-ins you can use to customize your taco seasoning to fit your budget and supplies:

  • Smoked Paprika – I really think the smoked paprika made the flavor of this seasoning pop, but if you can’t get it, you can use regular paprika in its place.
  • Garlic Powder and Onion Powder – When I make taco meat I generally am also adding a diced onion and a clove or two of minced garlic, so I didn’t include any garlic powder or onion powder in this mix. If you prefer not to use fresh onion and garlic in your recipe, you can add 1/4 tsp garlic powder and 1/4 tsp onion powder to the recipe below.
  • Low Sodium – Feel free to reduce the salt content to meet your sodium needs. Keep in mind that salt does help make other flavors pop, so the taco seasoning might not be as vibrant with less sodium.
  • Make it mild – If heat isn’t your jam, simply reduce or eliminate the cayenne pepper. You’ll also want to make sure you’re using a mild chili powder. The heat level of chili powder can vary from brand to brand.
  • Cornstarch – If you like your taco meat to have a slightly saucy consistency, add 1/2 tsp of cornstarch to your spice mix and add 1/3 cup water to your taco meat or beans when you add the spices. The water and cornstarch will create a nice taco-flavored sauce to coat the meat or beans.

How to Use Taco Seasoning

Brown the ground meat first, then add one batch of the taco seasoning recipe below and continue to sauté for about two minutes more to toast the spices. For beans, simply add the spices and heat through. If you plan to use this taco seasoning for whole chicken breasts, simply sprinkle the taco seasoning over the entire surface of the chicken breast, then cook in a skillet until browned on the outside and cooked through. You can also use it to season potatoes or chicken before roasting.

How Much Taco Seasoning to Use

This taco seasoning can be used in any recipe in place of one store-bought taco seasoning packet, which will season approximately one pound of ground beef, turkey, or chicken, or about 3 cups of cooked beans. The recipe below makes approximately 2 Tbsp of seasoning, so if you plan to scale the recipe up to make the seasoning in bulk, use about 2 tablespoons of seasoning for every one pound of meat.

How to Store Homemade Taco Seasoning

As with any dried herb or spice, this taco seasoning should be stored in an air-tight container and away from heat and direct sunlight. The lifespan of this seasoning will vary depending on the freshness of the herbs and spices you used to make this seasoning blend. Rather than going “bad”, dried herbs and spices slowly lose their flavor and potency over time, so for best results it’s recommended to use them within one year.

Note: I use a flat cost estimate for herbs and spices because they’re just too hard to measure and weigh such small quantities, so this cost is purely an estimate. I generally estimate ten cents for every teaspoon of an herb or spice, unless it’s a particularly expensive item. For salt, I generally estimate half that. So, take the cost of this recipe with a grain of salt (pun intended).

  4. Yum! Have used this on ground beef and chicken, for tacos, burritos, burrito bowls etc. The cayenne pepper is easily adjustable for spice level.

  5. This was VERY spicy, and I usually enjoy spice! Iโ€™m not sure if it was the chili powder I used or what. It was good though, just needs to be paired with a heaping dollop of sour cream and a glass of water.

  6. I have made this so many times I wanted to leave a review finally because I love it! I usually scale it 4 or 5 times and fill up an empty seasoning bottle for future meals since I make tacos often. The only adjustment I make is her placing half the cayenne with chipotle powder to up the smokiness. I also add the onion and garlic powders even though I include fresh onion and garlic in my tacos because I like a LOT of flavor.

    1. I typically use this amount for just one pound of meat, so if you’re cooking 5 lbs. I would make a 5x batch. If you just change the “1” in the servings field in the recipe card below it will auto adjust all the ingredient amounts for you. :)

    1. How do I know how much of the mix to use for one pound or 1 1/2 pounds of ground beef?

      1. In the text portion of the post (preceding the actual recipe/instructions) it is indicated that one batch of the combined ingredients is equivalent to a commercial packet of taco seasoning. The commentary also mentions using one recipe to season one pound of ground meat – beef, turkey, chicken – or three cups of canned beans.

Really enjoyed this recipe, but had to rate it 4 stars instead of 5 to show that not all of my reviews are five stars, and also, that although this is a really delicious, economical meal, it does not closely resembled tacos in my Canadian imagination :P It reminds me more of the “fish tacos” they sell at patio restaurants in the summer (also delicious, but not tacos in my opinion … but what do I know about real Mexican food? :D) This recipe has lots of plus factors though: good for the wallet, good for the planet, really easy to prepare lots and freeze some for later, and a great fresh taste due to the pico de gallo and sour cream. Tastes like more!

    1. Oops – this was a supposed to be a review for the lentil tacos, not the seasoning! My bad! (As an aside, I made the seasoning as directed and found it quite a “normal” taco spice level … maybe it depends on how old your chili pepper and cayenne are?

  28. โ€˜Chili powderโ€™ is a mixture of cayenne (hot pepper), cumin and garlic powder, and the recipe calls for these spices except cayenne And chili powder. Any reason why?

    1. A lot of chili powder blends that are on the shelves have mild red chiles as the base, not cayenne, so they have little to no heat. Then I add extra spices to kick up the flavor. If I were to make this blend with cayenne as the base it would burn your tongue off. ๐Ÿ˜… Plain ground mild red chile pepper is next to impossible to find and whole red chiles aren’t readily available across the whole country, so this is an easy way to make it with ingredients that are easy to find everywhere.

      1. Thanks, Beth– I actually came to the comments specifically to find out whether you’d already answered this question.

        The very first thing I noticed about this recipe was that it called for chili powder (ground chiles + cumin + garlic powder + oregano) + cumin + garlic powder + oregano + other stuff. That was enough to make me question whether the “chili powder” was a typo and I should actually be using “chile powder” (ground whole chiles), and there was no further mention. For people like me with easy access to a variety of dried whole chiles, it would be nice if the ingredients list and the description both confirmed that you do indeed mean “chili powder”. Giving the explanation you gave in this comment reply would help that make sense, and help prevent some of us from second-guessing or misinterpreting!

    1. I like chipotle in mine. Current version I have is a chipotle and roasted garlic. I think it is by McCormick. I used it for about everything.

  38. Nice! I realised that about 3/4 of the mix should of been stored in a sealed container for later use after I used the entire amount in my recipe. Oooh, hot, hot…So glad I had some cucumber & yoghurt plus banana & coconut on hand to use as condiments.   44. Thanks! This has the perfect amount of heat for me. ย I added it to chick peas, onion, and sweet potato using the corn and zucchini tacos for inspiration. Added shredded iceberg for crunch and cashew cilantro sauce,. Vegan and delicious. ย 

  45. I like that there is no sugar in the recipe, as the store bought packages contain sugar. Also, I substituted arrow root powder for the cornstarch to make it Paleo friendly.

    1. Because it’s easy to find this chili powder blend, but not easy to find plain mild chilis ground to a powder. :)

      1. Ooh, Beth do you reckon it would work well if I just blended up some chiles (e.g. poblanos)? I’m in NZ and “chili powder” doesn’t exist here like it does in the states (“chili powder” from the supermarket is really hot, like powdered cayenne pepper)

      2. I think it would still be pretty good, but it would probably depend a lot on what type of chiles you’re using, since that’s the main ingredient in the mix. I don’t have any experience using dried chiles, unfortunately, so I can’t give any good advice in that area. :(

  47. How much do I use per lb of ground beef if I’m making basic tacos and trying to substitute this for a typical taco seasoning packet? Thanks!

    1. I use one batch of the recipe per pound of ground beef (or a mix of half ground beef half beans). Think of it as a substitute for one of the pre-measured taco seasoning packets that you can buy in the store (if you’ve ever used those).

    1. Leave out the cayenne pepper and make sure the chili powder you are using is mild. I like McCormick brand.

  54. Thank You for posting this simple, economical recipe! This Taco Seasoning was fantastic! The only modification I made was to up the sea salt to 1 tsp. I also added 1 TSP each of granulated onion & granulated garlic. I always keep smoked paprika and non-GMO corn starch on hand so this recipe was a perfect fit for me!

    I made a Taco bar and Spanish Rice w/Black Beans and corn tonite. I used exactly 1 1/2 TBLS. of taco seasoning for 1 1/2lbs. ground chuck and used 2 TSP of the taco seasoning in my diced tomato mixture for the Spanish Rice w/Black Beans and Corn.   55. I use this constantly but never rated it for some reason. This is a perfect blend, vastly superior to store-bought mixes–though I suppose that depends on how fresh your spices are. Still, no one is going to miss the preservatives of the MSG-related flavorings found in commercial brands.
    I’ve used multiple recipes to replace store-bought taco seasoning. This is the one I keep coming back to.

    As someone already mentioned, make a larger batch and store in an empty spice container.

    1. It should be enough for one pound of beef. I usually brown the beef in a skillet first, then drain fat off if needed. Then add the seasoning and maybe a few tablespoons of water and simmer for a couple minutes more.

    2. I know this is only semi-related to the recipe, but my trick to draining the fat from the ground beef is to push (and pack) all the cooked GB to the side of the pan that has the handle. Then I prop up the pan using a 4″ to 5″ tall pepper mill (the cap on top of the mill should fit in to the hole in the handle of the pan), and let the fat drain to the other end of the pan. Once the drainage appears to be winding down, if it’s a lot of liquid, I take a serving spoon and spoon it in to an empty milk jug. The rest I soak up with a paper towel.

      BAM. Nicely drained ground beef.

  62. Does this seasoning mix work well with chicken? I usually see packages of taco seasoning separated for chicken and beef… so I was curious.

    1. You can add a little to help rehydrate the spices, if you wish, but I usually don’t. If you do, add about 2 tbsp to 1/4 cup and make sure it cooks long enough to evaporate off. I find that beef has enough moisture in it to help rehydrate the spices, so I don’t add any more.

    1. I usually use about one small onion and two cloves of garlic per one pound beef. :)

Sorry to necro an old thread, but I just made a batch (minus the salt), added half a jar of chunky medium salsa, and after simmering the whole lot, dumped a cup of leftover Kraft mac n’ cheese I made the other day. Ta-da- spicy macaroni! Granted, it turned out to be “kinda like chili with some macaroni tossed in”, so I’ll make this with a whole box next time…or add garlic and beans to make a proper vegetarian chili. Thanks Beth!

    I know you posted this recipe over a year ago, but any chance you could cover briefly what the ingredients are in the “chili powder” you used? I don’t think we have anything exactly like it over here, and some stuff online suggests the American “chili powder blend” (which is what you seem to mean) typically contains garlic and onion powder?

    1. Well, the label isn’t too specific (unfortunately). It says: chili pepper, spices, salt, silicon dioxide, and garlic. I think the bulk of it is mild red chiles and that’s what gives it that deep red color. I’m surprised it says salt, because it doesn’t taste salty at all. If you can find mild chili powder (made of just mild chiles), I think that would be a reasonable substitute.

      1. I make my own chili powder by toasting dried chiles (some combo of anchos, pasillas, and chipotle moritas). Then I grind them in a coffee grinder. It’s much better than the commercial stuff.

    1. Glad you liked it! I think what people in other countries call “chili powder” is what we call cayenne pepper, which might be why it was so hot! Chili powder here is a blend of mild chilis, cumin, and sometimes other spices. So, that might have been why your tongue was on fire! :)

  70. Out of corn starch, so I subbed about an equal amount of cocoa powder. Yum! (If making a bigger batch, would use 1/2 cornstarch & 1/2 cocoa… To get the cocoa flavor and cornstarch properties).

  77. I bought a cheese shaker to keep my taco seasoning in and just shake what I want into the recipe. You can add as little or as much as you want to suit your tastes. I have doubled this recipe for my jar so I am not making it all the time.

  80. I’m so glad you experimented and figured this out…I always have these ingredients in bulk (well…haven’t found bulk smoked paprika but I always have a little bottle of that) but when I try to do my own taco seasoning it ends up tasting like my chili seasoning. Can’t wait to try it.

  81. I just use one batch like I would one envelope of taco seasoning from the store. Although, most people are responding that it was a bit much, so maybe half a batch is good enough for most!

  83. Thank you for this recipe, it was so good and so much better than the packets! I didn’t have any paprika, so I just threw in an extra teaspoon of chili powder. I used it in your quesadilla recipe and it was awesome.

  84. I’ve been making a similar recipe for years. Try adding garlic and onion powder.

  86. Most homemade taco seasonings have WAY too much cumin for me. I like just a hint to get the smoky flavor. So 1 tsp of cumin… count me in! Can’t wait to give it a try!
